Sweetened condensed milk is one of the most common ingredients listed when making desserts. Since those of us who are practicing the ketogenic lifestyle can't just buy a can of condensed milk from the store, here is a simple recipe to make a keto version of sweetened condensed milk at home. With just a few ingredients and a little bit of time, you can enjoy you favorite desserts with this easy low carb, sugar free keto recipe.
Ingredients:
Heavy Whipping Cream - 2 cups
Allulose (or sweetener of choice - Erythritol, Monkfruit, etc) - 3/4 cup
Xanthan Gum - 1/8 tsp
Salted Butter - 2 Tbsp (or add a pinch of salt with unsalted butter)
Vanilla Extract - 1 tsp
Method:
1. Bring Heavy Whipping Cream, Sweetener and Xanthan Gum to a boil in a medium sauce pan on medium heat.
2. Keep simmering until for approx 20-25 minutes until mixture has reduced and thickened.
3. Turn off stove and add Butter and Vanilla Extract. Mix well.
4. Transfer to a container with a tight fitting lid and allow it to cool completely.
5. Store in the refrigerator for up to a week or freezer for longer.
