If you soak the kelp noodles in lemon juice and baking soda for a few minutes, it softens them making them amazing. My favourite noodles are from Anne at Keto Asian Flavors. I believe she is working on selling them as ready made-noodles.

Sadly I am allergic to lupin flour which is what she uses to make a lot of her bread type items. They do taste good though. I also like making the protein noodles out of the egg whites and gelatin as seen on Indigo Nili videos.

Correct. Kelp noodles must be soaked in warm water with lemon juice and baking soda to give them a pasta texture. Otherwise they are crispy. The longer they soak, the more like pasta. I soak mine for a minimum of 10 minutes.

@Adorable Adornments Steve at serious keto has an alternative version of her noodles that’s made from canned chicken and I can state from personal experience they’re fantastic. The reality is, you could practically make the noodles out of anything that will liquefy.

After watching this video, those are the ones that stood out to me to try. Especially when she said they reminded her of artichokes, I LOVE artichokes. Did you get any artichoke vibe from them at all? Wheat based pasta and pizza dough are the only two things I truly miss since going keto. I give myself a cheat day once a month on those, lol. Thankfully the popular cauliflower pizza crust is pretty good and hopefully these palm based noodles are too. Definitely looking forward to trying them.

I recently found a keto skillet lasagna recipe that used a noodle made with just mozzarella & psyllium powder. Super easy recipe because the noodles didn't have to be cooked. I used grated mozzarella, sprinkled the psyllium powder on then melted the cheese & stirred. I let it cool a little before pouring it onto parchment to roll out & cut into squares for the skillet lasagna. I made them about the thickness of cooked lasagna noodles. They were great.

For mashed potatoes I use celery root instead of potatoes. I peel them, dice them, boil until softened. Add salt and pepper, heavy cream and put them through a food processor. I like them better than potatoes. Try it and let me know what you think. 🌸

Warning for anyone allergic to peanuts, it's possible for you to also be allergic to lupin beans/flour. It's not absolute - you could also be allergic to other beans, talk to your doctor. I bring this up because it's not common but my daughter is allergic to peanuts, garbanzo beans (chickpeas) and lupin beans/flour. Only after the reactions were we told they're all connected but it's not common to be allergic to them all. Anyway, just trying to help out anyone with allergies. That hearts of palm pasta is on my shopping list now.

The best one, available from Netrition, is an Italian brand called Ciao Carb. They have 2 different kinds: Proto, which is the lowest carb (7 per serving), and Nutriwell, which is still low carb (13 per serving), but much more like true pasta. They come in many different shapes. No, they aren't ultra low carb, but totally worth it if you are missing real pasta.

I've used the kelp noodles and you need to prepare them with water, baking soda and lemon. They soften up, but you have to stir them around in the water until they are softened to your liking then rinse them thoroughly before using. I use them to make stuffed chicken wings and you'd never notice them at all. They absorb the taste of whatever they're added to. I prefer them to the shirotaki noodles.
@reikiwithcary2682

I have found that the immi noodles are softer and less springy if you soak them for a couple of hours in the water that you cook them in ( without either of the packets - flavor or desiccate - lol)- they go well in chicken noodle soup or with Italian sauces. I have chosen as a cheat for myself though, Fiber Gourmet pastas- one serving is 17 net carbs, BUT I can usually get at least three servings for myself out of that one serving so I don't feel too badly about it, plus, I only eat once a day- so it works for me. Tastes like and cooks like regular pasta- and.. you can freeze the cooked noodles which with the shiraroki type noodles is a no no! Thanks for all you do in bringing us good foods and recipes .. you are appreciated! ❤

Thanks so much, Annie! This was beyond helpful. I always WANT to try all the new ones, but often back away because I hate spending the money and then tossing food. With just one person eating it, one of those packages means eating a LOT of meals you don’t really like if the noodles aren’t your cup of tea! 😂 The lupin noodles look interesting. I wonder how they’d hold up being stored in the fridge as leftovers, though. As you say, they may just disintegrate. But that might be okay, too! I’m definitely going to try them. And stick to hearts of palm when I want to be fancy with my pasta for Italian dishes and shirataki for Asian dishes. Yours is one of my very favorite channels!!! 💕

I also love the hearts of palm noodles the best. I have found when I eat wheat more than one time in a row, I get depression really bad. I use the angel hair noodles, and the rice mostly. All work fine for any pasta recipe. I have purchased the hearts of palm not sliced up into noodles to try and see how they would work out in a mac and cheese recipe. I have yet to find a gluten free, very low carb elbow noodle too. Great video, thank you.

The edamame pasta is so delicious. I got a bag from a company called Liviva which they call spaghetti, but it's angel hair. Cook them a bit longer than the package says. If you get tricked into taking them out too early they will just taste like uncooked spaghetti. They do have 17 carbs 15 of which are fiber. Ingredients are organic edamame and water. I cooked them then sauced them with butter, garlic, finely grated parm reg., and lots of black pepper and finely chopped parsley. Tonight I think I'm going to add a serving of big fat shrimp. I can't wait. I am also going to have a new glucose monitor sensor now so that I can see how my body accepts the edamame pasta. I really hope it does, because it was definitely much more pastalike than the Palmini. I bought another brand of edamame fettuccini, which I will try later this week.

Good morning from south on 97 in Bend. I was excited to watch this video. I tried Trader Joes Hearts of Palm noodles. They were not to my liking at all. When you were testing Miracle Noodle I kept thinking that they didn't look like what I have had. Just realized I was thinking of Healthy Noodle that I find at Costco. They do not have a smell and just need a quick rinse. I don't think they feel rubbery. I have had lupin pasta, lulupasta, and it's just ok. Kind of gritty. I have tried making a couple of the online, weird ingredient pastas. Hit and miss as with weird bread recipes. Thank you for doing all the work even though I don't care for your favorite. Then again..... it might be my favorite from those you tried.😉

I agree! Hearts of palm for me, as well. But, most of the time, I just don’t bother. It’s just me eating it so I don’t need to worry about the expectations of others for something to look or taste or feel a certain way. I heat up (and drain well) canned French cut green beans and eat my pasta sauce over those if I’m looking for spaghetti with sauce. They have the right mouth feel, don’t really have much distinct flavor against a meat-heavy sauce with grated cheese, add some veggies and are cheap and inexpensive. I stockpile them when they’re on sale - my faves are Del Monte, regular or low sodium. I do like the Palmini lasagna sheets. I had been making noodle-less lasagna for 15 years and was perfectly happy until two years ago when I saw that Palmini was making lasagna noodles. I added them in and layered things and they were fine. I wasn’t ever much of a fan of using eggplant slices, etc to replace the noodles so it was an option to add that mouthfeel back. I still mostly make my lasagna noodle-less, but every so often I get the urge!

You have to soften the kelp noodles in water to which you add an acid and a base (like lemon juice and baking soda). Just swirl them around for a few seconds until they reach a nice noodly consistency then rinse to stop the reaction or they will become mushy. It completely changes the texture! I am a great fan, though, of the molecular gastronomy noodles that Keto Asian Flavors uses--I've experimented with using more lupin flour and egg powder to make them even better!

After I drain and rinse mine, I spread out some paper towels and I put those noodles on the paper towels. I let them sit there to dry. Then I put them in a hot large pan, the largest that I have, that's 12in. I spread them as much as I could. I keep them on there until the noodles are as dry as they can get. Then I add them to whatever sauce I have.

Great information, thank you! With the konjac noodles, immediately upon opening the bag, I simply squeeze about a tablespoon of lemon juice into the bag (I have opened just a part of the bag to get the lemon in so the stinky smell remains inside the bag). Then, give the noodles a shake and squeeze before straining and rinsing. The smell is literally GONE immediately when the lemon is added. I have also done this with pouring the noodles into a strainer and squeezing lemon juice whilst rinsing. This method also works of course but I do get that small initial smell of the noodles. So whatever I can do to avoid that is optimal! This was a massive game changer, simply adding lemon. I DO prefer to chop the longer noodles with scissors as I find that I notice the more rubbery texture if left so long. I have made everything you can think of with konjac noodles. Here in Australia they have lasagna sheets, not sure if those are available in the US. I've made lasagna, but also, I have used them to make Vietnamese style fresh spring rolls which I loved, and still intend to try making dumplings, I need to figure out the seal though, to keep them held into the parcel shape. Also, I have simply rinsed, not even bothered to cook off the moisture and they're great. But definitely wouldn't do that if I hadn't pre rinsed with lemon juice because the smell is noxious!! I'm definitely going to try the palm. Those I have been very curious about. In the US I was in Alaska and discovered konjac penne pasta at Safeway in the regular pasta section, not the health food area. Those are fantastic!! Can't find them in Australia though unfortunately. One of the things I just LOVE about these konjac noodles and rice is that they're so portable. I've literally grabbed a quick picnic of canned tuna or salmon, a baggie with some simple seasoning I'm in the mood for, some shredded cheese, I tend to have a basic prepper items like a small mct oil for picnics, my lemon, bag of konjac and I'm good to go. Honestly, with the exception of the cheese, the other items are grab n go from the pantry. Picnic on the beach can be so simple and tasty. Thank you for this great video.

Thank you for testing these products. I tried three kinds of the Liviva brand Shirataki with oat fiber: rice, spaghetti, and penne. I didn't mind the rice which I added to the chicken soup. I have not tried the spaghetti yet as I absolutely detested the rubbery texture of the penne with cheese sauce. If it would've broken up easier while chewing then possibly I wouldn't have minded it but it was too chewy and rubbery...and flavorless! Perhaps it needs to be cooked longer than the directions called for, but as a replacement for penne pasta, I give it a -10!

Artichokes are from a ground plant not a tree. I too like hearts of palm. I love the earthy smell or taste it has. thanks so much for doing all the comparison work for us! I have loved your videos since 2017❤️

I boil the palmini noodles in seasoned water for about 15 minutes before draining and adding a sauce. This will soften the ''noodles'' somewhat.

Actually "heart of palm" is not found inside the tree but inside the leaf stems of the palm branches. If you cut or rip a leaf off a palm tree & cut away all the fiber from the center of the leaf stem you'll find palm hearts are the softer core of the leaf stem.

Thanks - Very good. Bottom line, however, is that everyone has different likes/desires for Texture and Taste. I have tried all these and summarily say that (1) I don't like any noodle that is rubbery, (2) don't like any noodle that I have to make from scratch, and (3) I am not going to do a lot of processes to fix noodles that smell like fish guts when I first open the package. I. personally, prefer the Great Low Carb Bread Co noodles. The major challenge to this, however is price and net carbs. I can do 7 Carbs easily as long as I fast the next day. I really don't like the ridiculous expense: but hey it's worth it to have a good spaghetti dinner once every two weeks. What I am saying is don't try to be zero carbs and enjoy a great spaghetti dinner. "If you eat it - you should enjoy it". And you can do this without breaking ketosis and loving to eat a good spaghetti.

I used your 10% choc-zero coupon. Thanks! (KETOFOCUS is the coupon-code) I researched that ChocZero uses monk fruit, instead of sugar alcohols. I had been using one with sugar alcohols and wasn't feeling great after eating those chips.

No commercial brands are using almond flour. I bought Kaizen fusili and it cooked way faster than what the instructions say. I drained them and put them in the fridge to keep firm. Overall a great option if you want a break from meat meat meat

Spaghetti Squash- cut one serving (across like a circle, not lengthwise), cover with paper towel, microwave 4 minutes. Cover the uncooked end with paper towel & rubber band, stores in fridge for days until next serving is needed. Spaghetti squash is best freshly cooked. Also the (5 min) oven-baked 2 egg whites & 1oz cream cheese(with half teaspoon vital wheat gluten & parmesan cheese) pasta is good.

Thank you for the review. Loving noodles all my life when I became Keto I too went on a search for a good replacement. I tried all the Shirataki/miracle variants but I could never get over their slimy texture and never used them. I do love the hearts of palm but for me it is a no brainer since I love ANYTHING hearts of palm which has so many other uses! But recently I found a Keto noodle which, for me, has been the best ever but I did not see it among the ones you reviewed. It is called "Healthy Noodle" and is made of a combination of some of the ingredients in the noodles you reviewed and some of the chemist viral noodles. The noodles are delicious, have no smell or texture problems, go great with all sauces and have 6 whole carbs which are all fiber and thus they are 0 net carbs. You should try these.

You were not taught to properly prepare 2 of those noodles to get rid of the undesirable texture. I tried all the same keto noodles you listed plus a few alternatives to wheat or rice noodles before there so many options were available. My current favorite is homemade Keto Asian flavors noodles with sodium alginate in calcium chloride bath. Easy and delicious. I also love shirataki noodles in cold sauces or in soup and hearts of palms with veggies and rich thick sauces. I am so happy there are so many choices now!

For the kelp noodles you were supposed to put them in lemon juice and baking soda which softens the noodles. Then you rinse them off after soaking them for a few minutes. You should look into how to prepare them and give a review

Which flavor(s) of the Immi Ramen were good? Did you have a favorite? I want to buy some, but with the cost, I don't want to mess up on which of the three I buy!!! I watched a couple reviews and there seemed to be a general agreement on which one was the most savory and delicious. Or did you just try them with the sauces you made, which both looked so good, only with about 1/4 of the pepper flakes!

Hi Annie, thank you so much for all your amazing videos. They are very inspiring and helpful. I love this one on the various keto noodles. Have you tried the new Mac And Cheese product by Perfect Keto? It’s a dead ringer for Kraft Mac and Cheese! The pasta is Lupin flour based and comes with a dry cheese packet just like Kraft, but way better ingredients.

I find that the acid in the spaghetti sauce softens the kelp noodles.Just cut them up into smaller pieces. Rinse and drain well( I use a salad spinner). Then throw them in your spaghetti sauce and let them simmer a few minutes. This is very close to spaghetti texture. But I like Egglife or crepini noodles better

After you rinse the noodles bring the ph levels back to normal with 2 tablespoons of white vinegar in 2 cups of cold water. Soak the noodles for 2 minutes in the vinegar water, then re-rinse. The smell is totally gone. Also, you have to try Wonder Noodles ! They are the best in my opinion.

Wanted to try Shirataki until I saw them in this video.😅 Oat fiber noodles didn't look bad. I wonder how many people were put off by the tape worm comment though. My Mom woulda 😱 and avoided. Hearts of Palm looks good, but super thin noodles aren't the most appealing for me though. Gonna look into the rice though...👍 You eating kelp noodles.😂 Wheat based anything looks more my speed. 4 ounces for 14 carbs doesn't sound bad. Egg sandwich in the morning and this would be under 30-40 carbs for me. Breakfast is always the same but dinners are always irritating finding something not rich in carbs. I really appreciate your video, been trying to find noodles that aren't to carb rich. So thank you.👍👏

Thanks Annie! I'm fairly new to keto, only a few months. I have only tried the palmini and really like it. I make a lot of microwave dinners at work. It's so easy to carry the noodles, marinara and cheese to work and mix together and heat it up. I have looked at a few of the other noodles while grocery shopping but seeing maltodextrin in so many I pass on them. And now suspect I may be gluten sensitive or intolerant. I haven't tried to make noodles yet, but it may happen soon.

I would suggest staying away from anything that uses, wheat, oat, rice, tapioca anything as those are NOT Keto, so a few of these do not fall in the Keto category. I appreciate folks trying to make/find a Keto substitute, but you do really need to look at ingredients, removing those ingredients usually makes a huge difference. If you are focusing on weight loss with Keto, then look at Carbs, not "Net Carbs", your body doesn't understand the difference between a carb and a net carb, so that is all just marketing. Most people do well even when doing net carbs because the average human, at least in the US eats well over 100g of carbs a day and a majority of upwards of 300g, so cutting down in general usually helps, but to do proper, not dirty Keto, just avoid them where ever possible, and avoid premade foods if you can.
