In this episode we are making and serving a traditional "Cream Tea." See below for recipes!

To make approximately 2 cups of clotted cream:
Preheat oven to 175°F (80°C). Pour 1 pint of heavy cream into a shallow 2-quart baking dish. Let the cream cook in the preheated oven until it thickens and a golden crust forms on top -- usually 12 hours. Cool for 1 hour. Cover and refrigerate for at least 4 hours. Use a spatula to scrape the crust and the thickened cream below it into a jar or a bowl. Delicious on scones, fruit, and you-name-it.

Im 65 and have an addiction to my morning hot tea,just as most Americans with coffee. My English Maternal grandfather was born in England and came here as a young teen. I still remember having afternoon tea at Fortnum & Mason in London with my siblings and parents in the summer of 1976 like it was yesterday. What a treat that was! I'm trying to remember if the clotted cream served back then was all white of not. We were very adventuresome eaters so it wouldn't have deterred us from eating it either way. I do remember other restaurants we went to where we had afternoon tea served it white.

I used to watch my mother make clotted cream. It was made with full cream milk, fresh from the cows, then the Aga slow oven would work its magic. It was wonderful, with freshly made jam from the harvest.

Kevin, your Cream Tea is so lovely! I will be trying your clotted cream in the oven as it looks divine. I always cut my hydrangea blossoms with a very sharp knife and then bring them indoors and plunge the stem in alum. Then I put them in water and they seem to last forever this way. In fact I have one in our kitchen that is weeks old now. Have a great evening.
