Kevin - another nice backcountry cooking video. You’re the reason my backcountry spaghetti tastes so good as I learned from you to boil the hamburger Good advice on cheese longevity too I think I would cold soak the salsa and beans overnight and then add the beans into the hot eggs to serve them warm I’ve had trouble getting whole beans to rehydrate so I might purée the beans too before dehydrating Kyle
@KevinOutdoors
@KevinOutdoors 6 ай бұрын
Thanks so much. If you mash them as I did, they will rehydrate very quickly warm or cold. All the best!

My dehydrator is full of Butter Chicken and I am packaging yesterdays Mango and raspberry fruit roll ups. Wanted to say a big thanks to you for all the content- I watch everything. I have your Backcountry Eats book and trying new recipes. I have learned much from you and appreciate the time it must take for you to provide us with such great content. Happy paddling to all of us. Looks yummy Kevin ! Have you ever added (re-hydrated) ground chicken? / pork sausage? / ground beef? / chorizo? / ground venison? to your burritos?

I am wondering why you dont dehydrate your eggs. I love the burrito idea for breakfast tho. cook book is awesome; using it to plan my next trip
@KevinOutdoors
@KevinOutdoors 6 ай бұрын
You will find lots of people dehydrating eggs on KZbin but they have a high percentage of fat (~11%) so they don't dehydrate well and will eventually go rancid. Also there is a chance, a slim chance, but a chance of getting Salmonella poisoning. Not worth it. The Ova Easy pouches are a little expensive compared with real eggs but I use 2-3 pouches in a busy tripping season so I find it completely worth the extra cost. Who wants to get sick in the backcountry.

I’ve never gone wrong carrying fresh eggs cracked into a Nalgene. They last for a week and the yolks almost never break even on rough portages. Just pour and cook! Eggs are one thing I just can’t bring myself to do from a package. Love your channel, Kevin!
@KevinOutdoors
@KevinOutdoors 6 ай бұрын
Yep you have options. My backcountry egg video covers what you describe. On trips of 2 weeks or longer I do like the packaged egg crystals. But, they have really shot up in price. @@scottiebaldwin

With thru hiking, I’ll just have a small cup/pot to cook in. Will the egg crystals work in there since the space is limited?
@KevinOutdoors
@KevinOutdoors 5 ай бұрын
Oh yeah they should work. Depending on how narrow your cup is it may be a challenge to stir them but they will work.

Very nice Kevin. Do you buy the Ova Easy eggs in the USA?
@KevinOutdoors
@KevinOutdoors 6 ай бұрын
No, you can get them online, occasionally I have seen them in my Bulk Zone store, but probably not since COVID. Amazon.ca has them. 'Pure Choice' and 'Plant of Life' are Canadian brand that also makes egg crystals. 'Augason Farms' is another US brand. You can find them all online. They have all really gone up in price in the last year or so. I didn't price check before the video.

Looks great. Question, if I may - why cold soak? Does boiling water not work? I have never done a meal with cold soaking.
@KevinOutdoors
@KevinOutdoors 6 ай бұрын
Boiling water works much faster and can be done. I kinda like my refried beans and salsa cold but it works well warm too. I am starting to explore cold soaking more and more.

the process of dehydrating food kills all the nutrients in said food.
@KevinOutdoors
@KevinOutdoors 6 ай бұрын
It doesn't kill all the nutrients. In fact if you don't dehydrate at high temperatures you can preserve more nutrients than other cooking and storage methods. Remember this is for taking food on long backcountry trips (backpacking or canoe trips) where there is no refrigeration. Any sacrifices in nutrients or taste are over come by storage and weight.
@ktownc936

So by that logic, cooking kills all the nutrients in said food. Do you just eat raw broccoli?
