Thai Pudding with Coconut Topping (ขนมตะโก้ / Khanom Tako).
I got this recipe from my grandmother (see my last post 😊). Khanom Tako is a mildly sweet Thai dessert, made from rice flour and corn, topped with a coconut cream and served in a fresh Pandan leaf or banana leaf case. You can substitute corn with water chestnuts, lotus seeds, taro or purple yam, cut in small dices. It is best eaten chilled.
Ingredients:
Pudding:
1/2 cup rice flour
1 tbsp tapioca flour
1 cup boiled corn
1 cup sugar
3 cup butterfly pea tea water (instructions below)
Coconut Cream:
3.5 cups of coconut milk
1/2 cup rice flour
2 tbsp sugar
1 tsp salt
How to make butterfly pea tea:
add butterfly pea flowers and water in a pot and cook it over medium high heat until the colour turns dark purple
