I am from Myanmar, we do slightly bit different way to cook coconut noodle. Basically, we don't put vegetables. We cook broth with - garlic, ginger, traumatic, chill and chick-pea powders and coconut milk and chicken. When we serve noodle with broth , we add some chopped thin raw slice onion, spring onion, coriander leave, lemon juice and sliced boiled egg. Anyway, for sure, yours one is nice and yummy as well.
