A tip that’s worked well for me is to let your meat come to room temp (30-40 min) before the sear. That way the meat doesn’t seize up and you get a beautiful crust. Also, put those herbs to good use! Melt some butter in the pan with the herbs and baste your steak after that initial sear. Baste baste baste. Really enjoyed your video.

Bringing the steaks to room temp first does next to nothing for promoting a good sear. Getting a good sear is all about heat transfer to the surface of the steak and the interior temp of the steak doesn't really matter as much. What matters more, is starting with a steak that has a surface that is as dry as possible. It takes a lot more energy (and therefore time) to boil off surface water than it does to just raise the temp of the water in the steak several tens of degrees. Water retards the Maillard reaction, making it take hours rather than minutes, so you need to either dry the steak off or cook off the water before you can get a good sear.

As a Chef, I enjoy watching people who love food cook, and show how much they care about the products they cook as well. Great Kitchen set up as well man! For your pan, run the hot water until it is screaming hot and then put the pan under water, keeps it from warping.

Two words....cast iron. Most non-stick skillets/pans don't like high heat and shouldn't be used in ovens.

Kiefer .. I do essentially the same but next time try this .. brush a thin layer of olive oil directly on the steak, use course sea salt instead on both sides .. but allow it to stay on the steak for 1 hour per 1". Not only does it enhance the flavor but it increases the steaks tenderness. Enjoy! My favorite is Ribeye steak.

Britonbear you can’t recycle used aluminum foil, nor should it be reused for health and sanitation reasons. If you have a way of cleaning grease off your stove without a ton of water or chemicals, you should share that secret with the rest of the world! Are you aware of the water shortages in California? Sometimes you gotta pick your battles friend.
