I always use rice as a side dish,. just boiled with water and butter. Sometimes giving it a bit of colour with green peas and yellow corn kernels. But this is amazing, rice as main dish, mixing it with the best flavors and textures. Especially with this red sauce, must taste great. Going to try it soon.

Its a random tip i picked up nut when Im going to fry or grill my chicken and I want it not to dry out i mix in some yogurt with th3 spices and marinade it. It stays so juicy, its amazing. This recepy looks delicious, cant wait to try it!

Jambalaya is not a Cajun dish. The Cajuns were the Acadians that came from French Canada to Louisiana. Jambalaya originates from the French and Spaniards that immigrated directly to Louisiana. The correct term for this dish is Creole. Creole is the culture that includes all of the people that settled south Louisiana, including the Cajuns. So Creoles are all the local people of any race or ancestry in Louisiana (this includes Cajuns) that were born in Louisiana and usually has colonial Louisiana origins.

@@IslenoGutierrez I think we should specify "southern Louisiana" when speaking about Creoles. My people have have deep Louisiana roots - in the north - and we have never identified with being "Creole" to any degree. My people were technically racially "mixed", like almost all African Americans *technically* are, but of the Anglo-Saxon variety - not French/Spanish. In northern Louisiana, the concept of being "Creole" didn't/doesn't really exist for people native to the region because the region is primarily Anglo culturally. It's more like the rest of the South (with small "pockets" of creole culture in certain areas). Unlike the French/Spanish, the British marked you as either white or black, no matter what your racial mixture or culture was. Sometimes they'd refer to someone as "mulatto" or some other variety of the term, but even that was purely a term used to denote race and to separate such individuals from whites. The British were much bigger proponents of racial purity among whites than were the French/Spanish, and they never cultivated the type of culture that existed in Southern Louisiana, whereby white and black melded to create this "Creole" identity. The same people being referred to as Creole in southern Louisiana would identify as white or black if they had instead grown up in northern Louisiana.

@@anyaw340 Yes, I agree. I should have specified south Louisiana, however central and north Louisiana has pockets of culture similar to south Louisiana such as in Nachitoches for example. However, Creoles are the native-born people in south Louisiana of any race descended from the colonial Louisiana population. So there are white Creoles, black Creoles and mixed race Creoles. Cajuns are white Creoles that adopted an alternate identity called Cajun in the 20th century. South Louisiana’s people, culture and cuisine are Creole. Yes. Oh, and in certain pockets in north and central Louisiana. I know most of north and central Louisiana is more like the rest of the south. Y’all eat and talk like them too!

Don't forget to add a little baking soda and an egg white to the chicken. That will keep it from getting dry. (9 grams baking soda on 1000 grams of chicken will do, aka 9 promille.)

Something's not quite right with the Spice Mix. The indicated quantities are 3 tablespoons (Onion, Garlic and Paprika Powders) + 1 teaspoon (Cayenne Pepper Powder) + 2 teaspoons (Salt). In total the quantity of Spice Mix is 3 tbsp + 3 tsp. From this amount, 2 teaspoons of the Mix is to be used for marinating the Chicken and Prawns (hope I'm right so far) which would leave 3 tbsp + 1 tsp. Then further down in the cooking process (after adding the Tomato+Red Pepper Paste) the recipe requires to add 1 tablespoon of the Spice Mix which would then leave 2 tbsp + 1 tsp of the Mix, which is of no use any more. Could you please explain. Thanks
