If you had the opportunity to eat just one meal before you die, what food would you choose? For me, it's Kimchi-jjigae.
Kimchi-jjigae is only delicious when the kimchi is delicious. It tastes much better when made with old kimchi that has been fermented for a long time rather than freshly made kimchi. It goes without saying that if you cook Kimchi-jjigae in a foreign country, it won't taste like the Kimchi-jjigae made with your mother's kimchi in Korea.
This recipe is a way to make really delicious Kimchi-jjigae using store-bought kimchi instead of homemade kimchi. I used commercially available kimchi, and if you cook it according to the recipe, it can be made really delicious. Trust and follow along!
You will understand why I said I want to eat this food before I die. It is best served with freshly cooked warm rice, a fried egg, and Korean seasoned seaweed.

Red pepper paste (Gochujang) 1.5T
