I finally got around to making this today for my family. It turned out far better than I could have imagined. It was soooo delicious. All five of my kids loved it too, and they typically don't like food that's too spicy. I got a few comments like "Dad, for my birthday, will you make this again?". THANK YOU Maangchi.

---- For my own future reference :) ---- Ingredients: Stock (alternatively can use chicken or beef broth) -anchovies, 7 -daikon, 1/3 cup -green onion roots, 3 -dried kelp, palm sized amount Kimchi Jigae (serves 4 ) -green onion, 3 -fermented kimchi, 1 lb -kimchi brine, 1/4 cup -onion, 1 medium-sized -pork (or substitute), 1/2 pound -salt, 1 tsp -sugar, 2 tsp -hot pepper flakes, 2 tsp to taste -hot pepper paste, 1 tbsp -sesame oil, 1 tsp -tofu, 1/2 block Directions: Stock 1. Remove head and guts from anchovies. Chop daikon into thin slices. 2. Put anchovies, daikon, green onion roots, and dried kelp into a pot. 3. Add 4 cups of cold water and bring to a boil for another 20 minutes. Turn the heat to low and simmer for an additional 5 minutes. 4. Strain the stock and discard (or re-use) ingredients. Kimchi Jigae 1. Chop 2 green onions on a diagonal into 1 inch pieces. Chop the last green onion into thin slices and set aside for garnishing. Chop out the knots of the onion and slice thinly. Chop the kimchi and meat into bite size pieces. 2. Pour the kimchi brine into a large pan or pot and add the kimchi, pork, onion, and green onion. Add salt, sugar, hot pepper flakes, hot pepper paste, and sesame oil. 3. Add 2 cups of stock to the pot and bring to a boil for 10 minutes. 4. Chop tofu into big slices and add to the bot. Turn down the heat to medium and cook for another 10-15 minutes. 5. Add green onion garnish and serve!

Just made this for the first time last night. My boyfriend asked me if it was possible to send you messages somehow because he wanted me to tell you he loved the jjigae. He said that he had been missing Korean food since he hasn’t had it in a while & his mom used to make this all the time when he was growing up. It was my first time not just making it but eating it. Wasn’t sure if I’d like it but I loved it. It was really good & extremely flavorful. I used my well fermented kimchi that I made following a few of your videos. I couldn’t find pork shoulder so I subbed it for country style pork ribs & I used chicken stock. I can see myself making it again. He also is addicted to the kimchi pancakes lol. He constantly asks me to make them for him.

Oh my gosh, this is insanely delicious! I made it pretty much according to the recipe. I didn't have large dried anchovies, but only medium sized ones so used 10 instead of 7. The layers of different flavors combined with just the right amount of heat made it the perfect meal tonight on a cold, wet evening. Thank you for your ever sunny disposition and providing such wonderful recipes. I even made it with your traditional kimchi recipe!

I started getting sinus congestion the other day. I made this with extra chili flakes, no more sinus problems! It had a very comforting taste, like how people talk about chicken soup being comforting. I loved it. I think this will be a new staple for cold season. As a side note, I'm from Michigan and grew up with very non-spicy food. I assumed I didn't like spicy food then I had kimchi for the first time in March. Apparently my spice tolerance is through the roof! My husband looks at me like I'm crazy as I happily eat Tteokbokki. I got your newest cook book for my birthday in May and I've been having a great time trying out new things.

I am not Korean but love Korean food for the varieties of spices and flavors. It's my #1 food of choice. I had traveled so far in the past to find a Korean restaurant since we moved to New England. I don't have to anymore as I enjoy cooking. With your youtube recipes, I made Korean kimchi and kimchi jjigae...oh my! It's so satisfying and tasted so good. Thank you so much. And yes, don't anybody throw away kimchi juice/brine. You could do a lot with it.

This recipe is absolutely hands down. Ever since I found this recipe, my kimchi stew has been super delicious. I usually add more vegetables like mushrooms, bean sprouts, enoki mushrooms and shirataki noodle (more like Japanese kimchi nabe). Maangchi, I can’t appreciate you enough for sharing this recipe! I couldnt find kelp but I used dried seaweed and it turned out to be still good 😍 I took small breaks from work and went to the kitchen again and again to eat it. Every advice Maangchi gave is true! Pork with small fat and skin is most delicious in this!!

I finally made this last night and it was so scrumptious! I wasn't sure if my husband would be into it, but he loved it. Thank you Maangchi for that easy and clearly structured recipe. I am currently making it for the third time and I am thrilled. It’s hot, hearty, warm and filling and yet with that underlying sweetness and tenderness, perfectly Umami. 👌🏼 I love it and can’t get enough of it. The recipe is also so easy to adapt according to what I have at home. For example I am adding freshly fried bacon on top for some extra grease and crunchiness. Or I am adding lard for that extra fat. The other time I had a lot of Kimchi water/ sauce left over but little cabbage and vegetables, so I’ve added thinly sliced white cabbage that I’ve kept in the freezer, mixed it with the plenty of kimchi sauce and use that as the vegetable/ Kimchi base for the stew. It works well and tastes just as good.

Maangchi, I finally made this tonight! It was very good. Since I know that I like savory kimchi jigae I halved the sugar, just to try it out. It came out a little sweet for me, and a little spicy! I think it was the brand of gochujang I used. Next time, I'll leave out the sugar and halve the gochujang! A little extra salt and water still helped fix this batch to my taste :) Such an easy recipe. Also I could not get any kelp or radish so I used a half teaspoon of hon dashi and a tablespoon of beef concentrate. Delicious!

hi maangchi! i hope you are well these days. i tried this recipe with a few changes based on what i had at home and it tasted so so amazing! i absolutely loved it. i enjoy korean cuisines and this 김치 찌개 is heavenly on a rainy day. what i did that was different from yours is that instead of boiling anchovies, daikon and kelp, i diluted one anchovy stock cube in water. my store bought kimchi didn't have much brine unfortunately but that's okay! i also used beef instead of pork. i want to try this again but with pork next time. thank you so much maangchi! 😍

This is really wonderful! It's not too spicy, but it warms you up. The sourness of the kimchi mostly cooks off, too, leaving the fragrance of the chili to come out. I couldn't taste the anchovy broth in the final dish, but I'm sure it would be missing a certain something without it. I did taste the broth before using it, and it was so good that I'm going to have to see if Maangchi has other recipes that include it. I made mine with homemade kimchi (Maangchi's recipe), because it's so much more economical than buying it in the store. And I now have a supply that will last me all winter and part of the spring. Lastly, the kelp is really nice contrast in a crisp little salad. I cut mine into strips and had it with cucumber, onion, and Korean radish cut into matchsticks. I have eight month old kimchi in my fridge (my fridge is just above freezing so it's still delicious), perfect for kimchi jjigae. I always make a huge amount. Tomorrow I will make some and then I will be almost out of kimchi and it will be time to make more!

Good aged kimchi is like two three year old, you can keep it in the fridge but you can also store it old school like my mum in a cool dry play away from sunlight, remember to make it airtight

I recently made like 3 pounds of kimchi and discovered that I don't actually like it lol. But I also discovered that it's delicious when it's cooked so I've been putting it in ramen, making kimchi pancakes and now I'll try this. I'm sure it'll be delicious.

Ah yeah it's like eating a raw vegetable vs a cooked vegetable, I prefer it cooked too. It really changes the dynamic of its flavor and softens the texture.

@@shakeandbaik yeah! My younger brother always love cucumber kimchi since he was little. But he doesn't like cabbage kimchi at all. He likes crunchy, but he likes cooked kimchi as well!

Maangchi, I love Kimchi Jiggae and I love you too! In Malaysia here we have a korean restaurant that serves Korean cuisine. When I try a little bit of kimchi I feel that I cannot swallow that thing anymore. But then my friend suggest to me to try Kimchi Jiggae. And it suits my taste sense very well. recently i have a cold, and I don't like soup or tea. but my cousin's grandma always makes kimchi jjigae and it's DELICIOUS! she's korean, makes it all from scratch, and of course grandma's food is the best food. i hear kimchi is good for health too. a perfect dish for my sickness :D

This was amazing, I hunted down the ingrediants and followed the recipe exactly, except I used spam instead of a cut of pork and added enoki mushrooms along with the tofu. Thank you so much! The tip about sautéing the kombu afterward was awesome. It was a great added texture and flavor, and I love not throwing things away. To anyone on the fence because of the ingredients you might not be familiar with, I was intimidated but this recipe was so quick and simple and the flavor is worth trying new things!

When I make my kimchi stew, I don't use tofu, but I add those round rice cakes that I got from the Asian market. The Korean restaurant that I usually order from puts the rice cake things in theirs, so I wanted to do the same. They soften up in the stew very well. This soup helped speed up my family's recovery when we all all got sick earlier this year. Think I'll make some today.
