Kimchi Pimento Cheese | Tori Tori Orlando Florida

Today I am making a Kimchi Pimento Cheese from a restaurant called Tori Tori in Orlando Florida. I saw this on a Mike Chen video recently and had to figure out how to make it.
Ingredients:
8 oz fresh shredded sharp cheddar cheese
4 oz cream cheese, softened
1/2 c mayo, Kewpie
1/2 c minced kimchi
1/4 c minced pimentos
1 tsp brine from the pimentos
ground pepper to taste

Love pimento&cheese... Ive been trying to make sushi/gimbop recently...this with crab sticks, some avocado, eggs, rice and wrapped by seaweed seems like it would work really well. Thanks for the inspiration.

It was redder and denser than that. It sticks hard to the side of the bowl it comes in.
