King Arthur Gluten-Free Dutch Oven Bread
For the starter
3/4 cup King Arthur Flour
1/4 teaspoon dry yeast
3/4 cup warm water (100-105 °F)
For the bread:
1 3/4 cups of flour
1/2 teaspoon dry yeast
2 teaspoon sugar
1 teaspoon of salt
3/4 cup warm water
How to prepare:
Into a bowl add 3/4 cup King Arthur Flour, 1/4 teaspoon dry yeast and 3/4 cup warm water. Mix well with a whisk, cover with a kitchen towel and set aside for 2 hours or overnight. To the starter add 1 3/4 cups flour, 1/2 teaspoon dry yeast, 2 teaspoon sugar, 1 teaspoon salt and 3/4 cup warm water. Mix with a large spoon, then cover the dough and set aside for 20 minutes. Add some olive oil to your hands, remove the dough from the bowl and place on top of a clean surface cover with a bit of flour, fold the dough in half for about 5 times, It will get sticky and that’s ok. Cover again with a kitchen towel and let it set for 45 minutes. After the 45 minutes, fold the dough a couple more times and let it rest for 30 minutes. In the meantime, pre heat the oven to 450°F with the dutch oven inside. Put the dough on top of a parchment paper and score it. Remove the Dutch oven from the oven and place the dough inside the dutch oven pan. Cover with the lid and bake for 40 minutes, then after the 40 minutes, remove the lid and bake for 25 to 30 minutes.

Para o fermento natural
3/4 xícara de Farinha King Arthur sem glúten or farinha de trigo normal se preferir
1/4 colher de chá de fermento seco
3/4 xícara de água morna (40°C)
Para o pão:
1 3/4 xícara de farinha King Arthur
1/2 colher de chá de fermento seco
2 colheres de chá de açúcar
1 colher de chá de sal
3/4 xícara de água morna (40°C)
Como preparar:
Em uma tigela adicione 3/4 xícara de Farinha King Arthur, 1/4 colher de chá de fermento seco e 3/4 xícara de água morna. Misture bem com um batedor, cubra com um pano de prato e reserve por 2 horas ou durante a noite. Acrescente 1 3/4 xícara de farinha, 1/2 colher de chá de fermento seco, 2 colheres de chá de açúcar, 1 colher de chá de sal e 3/4 xícara de água morna ao fermento natural. Misture com uma colher grande, cubra a massa e deixe descansar por 20 minutos. Adicione um pouco de azeite nas mãos, retire a massa da tigela e coloque em cima de uma superfície limpa com um pouco de farinha, dobre a massa ao meio cerca de 5 vezes, vai ficar pegajosa, mas isso è normal. Cubra novamente com um pano de prato e deixe descansar por 45 minutos. Após os 45 minutos, dobre a massa mais algumas vezes e deixe descansar por 30 minutos. Enquanto isso, pré-aqueça o forno a 232°C com a panela de ferro dentro. Coloque a massa sobre um papel manteiga e faça um corte de leve em cima da massa. Retire a panela do forno e coloque a massa dentro. Cubra com a tampa e leve ao forno por 40 minutos, depois de 40 minutos, retire a tampa e asse por 25 a 30 minutos.
