No, that's a very good question! For just doubling, you can just double all the ingredients. When you get to higher mutiples like tripling or quadrupling a recipe, though, you'll want to learn to use baker's percentages to scale your recipes up, to ensure that your ratios remain accurate. At 4:29 you turned the dough and said to do exactly the same thing as you just did. I thought that would mean roll the dough away from and toward you but the video showed you turning the dough and then rolling sideways which effectively is exactly the same thing with respect to the dough but why turn the dough if you are just going to roll in the same direction relative to the dough? After the turn did you actually roll away and toward yourself and the video just left that out?

Just before the second rolling, the dough is rotated so that when the next fold is done, those are perpendicular to direction of the previous fold. You can roll either direction: the rolling is for getting the dough to a level width and to the lengths before the next fold. Let us know if this helps, Frederick! -🥐Lily

@@KingArthurBakingCompanyThank you, Lily, It might sound strange to you but I don't have any ability to visualize even still images let alone moving and I couldn't imagine what happened in the video gap. I took a piece of parchment paper and marked the initial fold direction, then folded it and then I could see how I had to roll it to make the next folds perpendicular to the first folds.
