He was acting incredibly cocky earlier in the episode, but it's pretty clear to me that when he said "we serve that shit" he was saying it out of intense shame, as in "I can't believe we serve that shit", because, in his own words, Gordon was showing him things he didn't want to see. You can see it on his face that that's the moment he truly realized how bad things were and he couldn't ignore it anymore. The way he worded it does make it sound like he's defending the food though so I can see why people would misinterpret that if they're not paying attention.

Well, there’s a difference between having it be your own home, and a restaurant where there’s other people. This sort of situation isn’t a hey, let’s ease you into the process and work on it slowly, it’s a whole come to Jesus moment before someone dies from a disease they contracted after eating there. Between the mold, the rats, the cross contamination with raw meat, the spoiled meat, and you know all that cream was not stored at a proper temperature or sealed right either, it would be a miracle if no one had been sent to the hospital with extreme food poisoning or worse after going there, and that can easily kill someone. But also, I imagine it would be easy to come home with bedbugs or lice after eating there since there’s old upholstery that never gets cleaned, and all it would take is one person who doesn’t know they’ve got them yet. With the hoarder shows, they’re addressing issues with people’s homes where the residents are the only ones at risk due to all the health hazards, but for a restaurant, these people are putting others at risk every day.

The Old Neighborhood Restaurant was up for sale when this episode was filmed in July 2013. After the episode aired, the owners increased the asking price to $775,000. The owners eventually sold the restaurant and closed their doors on 1 May 2016. Wow, so they got their restaurant completely renovated with brand new equipment worth thousands of dollars, which they didn’t pay for, & then sold the place. I guess that’s better than the alternative which would’ve been them continuing to cross contaminate & let it get filthy again.
