I am from Mizoram, North Eastern part of India. We Mizos love stew, we call it 'Bai' in our dialect. In every Mizo dish, you will find a stew. We too love adding fermented soyabean (which we call Bekang) in the stew. I made this (doenjang jjigae) and my family loves it. I made a paste from our fermented soyabean, it taste so delicious. I made a vegetarian version of this substituting anchovies for kelp broth and WOW- this is probably the best soup/stew I have ever tasted. It’s full of flavour and goes perfectly with fluffy white rice. The potatoes really make this hearty and delicious.

@@Manukasansaar Go to Asian market and ask for Kombu. Boil kombu in water for 20 minutes. You will have a good broth... dont forget lot's of garlic :)

It needs extra spoons of soy sauce to substitute anchovies when using kelp broth. kelp broth lacks umami molecules from proteins, which ia soy sauce all about.

This recipe has such special memories for me. My friend from Korea made it for me often and taught me to make it. She always added hot pepper flakes too. The flavor brings me right back almost 10 years ago! We invited friends to our tiny apartment in the summer and ate this hot and spicy stew with hot rice so we were all sweating so much we felt like we would all die! Her doenjangjjigae was so good because her mother sent her the doenjang that her grandma made in Korea. It was the best doenjang I ever had. Nothing at the store comes close! Thank you for this recipe, I made it 3 times this week and ate each pot by myself!

in the past I tried so many times to make soybean paste soup but never really succeeded, I thought it just not my taste...after watched this video I followed every step and add anchovy to it, surprisingly, the soup taste completely different! it's very good! still hard to believe how big the difference is to make the soup in more original Korean way..now I start to like making soybean paste soup more often :)

@@maskipapswalangtsamba168 Not really... Doenjang is the stronger saltier brother of Miso, if you will. A bit like cheese, and the difference between goats cheese (Miso) and Stilton (Doenjang) - both cheeses but with different taste and punch.

Since this was posted almost 5 years ago I've made this so many times I have it memorized. This is one of my favorite stews, and I used to pack either this or beef radish soup for lunch at least twice a week during university. Decided to watch it again before I make this for dinner tonight and empty out the last of my container of Doenjang! The green pepper definitely adds a flavor that shouldn't be skipped. Yum!

WOW!! This was so unbelievably good. My favorite Korean dish I’ve made by far. First time I finished my whole bowl! We’re in a snowstorm and running low on produce so I had to use what I had. I used mushrooms and pork belly instead of zucchini and shrimp. Didn’t have chili peppers :( but was still delicious! Also!! I added just a bit of gochujang as you say in your book and it really took it to the next level. I just finished my dinner and I already want more! Seriously I can’t stop thinking about this stew. My mom is Korean. We were fortunate to live in Korea for about a year when my dad was stationed at Camp Casey. My mom is getting older, and she's unable to cook like she used to. I'm so grateful to have found your channel and to have the opportunity to recreate the flavors of my childhood. My youngest son is enjoying your recipes as well. We made a special trip to the Korean store, where I bought them mochi and other supplies for the Doenjang-jjigae. I used Hakurei turnips from my garden instead of potatoes and a jalapeno instead of a chili pepper. This is a very filling stew, and surprisingly low in calories. Thank you so much for the recipes!

we, in Indonesia, also have kinda similar soup, but you know, it is also different, we call it "sayur asem", translated as "sour soup", and it is made of various veggies cooked in a soup made of soybean paste ( we call it Taucho ), Indonesian shrimp paste ( we call it Terasi), and the most important, the Tamarind paste, and it is a very well-known soup here because it tastes so fresh,sour, and good !

I just made doenjang-jjigae last night! lol I didn't follow this recipe I kind of have my own, tailored to my tastes, and it is so good! One of the best Korean stews and easy to make too. Plus you can tweak the ingredients and put so many different things in it.

Just made this today and it was delicious! This stew tasted very savory, earthy, and a bit nutty. I added everything she added except for the anchovies (forgot to purchase 😅) and instead I used chicken broth instead of water and it tasted delicious! I followed her recipes through the teeth, watched repeatedly. Love the side dishes the most cause I can store them for one or two weeks in the fridge. Very healthy, quick, and long lasting when store correctly.

Thank you maangchi!! I made this for my first time today because it's cold and rainy outside and I wanted some soup or stew. I didn't have potato or green onions so I used leftover bell peppers and mushrooms and it was still beautiful. I can't wait to make it again. ❤️❤️

Hi Maangchi, i've been following your channel for years now but i only cooked a few from your recipes, mostly side dishes.. i'm filipino with a korean husband.. i just recently moved here in Korea to live with him and still in the process of adjusting.
