It's Korean raw fish, aka 회 aka Hweh. We eat it for you, and show you how it's done. Step 1: order. Step 2: eat. It's that easy!
But, no, really: it's really different than Japanese sashimi. Totally different fish and different textures. Some of it's great and some of it tastes like gortforsaken poison. We show you some of the ones we like.

FYI, the 'Hwe' in "Hwe-Sik" means a team or group, not the raw-fish, and It means a "team meal" as a word-for-word translation. Same Korean character same pronunciation but different Chinese character with different meaning, so the "Hwe-Sik" doesn't mean they eat Hwe (raw fish) all the time. And, another FYI, I've noticed that Koreans enjoy chewy feelings more (Simon described it tough) so they enjoy it fresh raw (alive). That's probably why Koreans enjoy Gae-bull (the penis fish) and San-Nak-Ji (alive octopus). So when you eat those, you might want to focus on enjoying the chewy feelings rather than the taste itself. Japanese Sashimi is aged fish and it is softer and more favorable than Hwe. In USA or Canada, you probably would be more familiar with Japanese sashimi, the aged fish. In Korea, they call the aged fish "Seon-Uh (선어)".

haha no. some fish goes upside down because of the pressure of the tank, like some water tanks have water continuously running through it, like currents and sometimes that causes fish to go upside down

I have to comment that Japanese sashimi and Korean hweh is quite different. I enjoy both of them. In Japan, the sashimi is kept for a few days to bring out the flavor. Korean style hweh is right from the tank. Koreans have a saying that if the hweh is bad if it's soft and pungy. I enjoy thinly sliced 자연산 도미 or 광어 활어 with 막장 instead of 초장. You should try it some time. it's actually much better. The key is that it has to be thinly sliced because otherwise, it will be more chewey. The fresh 활어 문화 is Korean where the 회 숙성 문화 is japanese. I like originals, and not copy cats. That's why I will never go to a Japanese sushi place that are run by Korean, or a Yakiniku (japanese kalbi) place run by Japanese.

Victoria Alberona It isn't possible to clean. This stuff will stay in solution, floating around, until it runs into wild life or precipitates out and falls to the ocean floor. Then, you have to worry about shellfish and bi-valves becoming toxic. I think the US government has been complicit in covering this up, just as TEPCO has been as well. People are consuming ocean products that are contaminated and will suffer for it in the future.

Oh my god Im just so thankful that you guys defined the tern 회(hweh) as a food different from sushi and sashimi. Historically, the Korean culture of eating raw fish (hweh) was some hundred years ago passed on to the japanese where they developed it into a food called sushi dispute not intended.
