??? This is the traditional way to make it. He exactly described how Americans do it. The only difference is the chives, but even additions are common.

my grandparents made food like this because thats how everyone made food back then. everyone their age learned food like this but it wasn't considered fine dining. their skills today are simple because they didn't have the tools we do today

@@funk3nst3in not everyone, my grandma could not cook. A lot of people came out of the depression making food that was simple but not delicious. It really set the stage for them and the next generation to mostly eat canned, frozen, and boxed food. I had to learn what real food is. I showed my sibling. We have been trying for years, slowly but surely, to get our mom to eat fresh vegetables and real food. It's much harder than getting a kid to their vegetables. Her mother did not know how to cook like Jacques Pepin. Many people did, but not "everyone".

It's always so funny how Pepin's cooking looks so rustic and simple and homemade, and then, at the very last minute, in the final shot, it always looks so gourmet and elegant lol

My precious British mother made the most fabulous Mac and Cheese ever! First of all, she used FIVE different types of cheeses. She mixed milk with real cream to make her roux She used some special spices including nutmeg off the nut. She used white pepper because she once used black pepper and (I was little) thought there were bugs in it! White pepper from that time on. On top, she had breadcrumbs. She also baked the whole thing with the breadcrumbs on top. That's Daphne's mac and cheese and I'm proud to share that. She was an AMAZING cook but this was one recipe I sadly remember because healthy it is not! But once-in-awhile, oh my, it is super delicious.

He's so amazing! Jacques sets the timer for the panko for 5 minutes but he's so on top of his kitchen, the panko is in his hand out of the oven as the timer starts to ring. He hasnt worked in a commercial kitchen in decades yet its still ingrained. Hes just the best, nobody compares. Ramsey is great but Jacques is the godfather.
