Chicken Marination :-
4 medium size onion
1 cup cooking oil
1.5 kg chicken (medium size cut)
2 tbsp Fresh ginger garlic paste
1 tbsp fresh ground green chili
1 tbsp red chili powder
1/2 tsp turmeric powder
1 tsp garam masala
1 tbsp coriander powder
1 tsp caraway seeds
4-5 cloves
1 gram saffron
1 tsp cardamom powder
1.5 tsp Salt or to taste
2 tbsp fresh coriander leaves
2 tbsp fresh mint leaves
300 g curd or yogurt
100 gms cooking oil
2 tbsp lemon juice
1 cinnamon stick
Rice:-
1.5kg Extra Long Basmati Rice
water to soak
4 tbsp salt
1 tsp cardamom powder
Handful of coriander and mint leaves
2 tbsp clarified butter or pure ghee
1 cinnamon stick
1 tsp caraway seeds

Salam alaikum! What’s not great about it? I have seen and followed this video so many times now and never had an issue with the sound😮 It truly deserves all the accolade Mashallah tabarakallah! I had a quick question though: would this specific portion be enough for 10 people? Bearing in mind all the variables including this not being the only dish on the menu and cultural preferences in regard to what constitutes a decent portion (in other words heavy eaters ehm ehm)?

@usmanhi89 Walaikum Assalam JazakAllah for your kind words. I have used 1kg each of rice and chicken, so 2 kg biryani should be enough for 10 people I reckon provided there would be other dishes too. I have recently hosted many parties and I have a habit of preparing various dishes so everyone can find something to suit their pallets and observed biryani is always enough as quantity. (In additional add little Kevra and Rose water before putting on Dum...its take your taste to another level ) i watched full video to just check whether adding tomato in biryani receipe or not because in most video they called hyederabadi biyrani by adding tomato .which is not correct....

This is the most near perfect traditional authentic Hyderabadi biryani recipe I've seen till date! I thought I'd never find it the way my mother was taught by her elders. My grand aunt's recipe has the same ingredients, except in those time they used whole spices and not g. masala powder, no colours, using regular sona masoori rice and always with mutton. Only after broiler chicken became common in the 70s did biryani branch out to chicken. And she always gave dum on coals...her biryani was legendary!

There is little to no usage of Black pepper, Nutmegs , Mace, Cinnamon, Corriander etc though the stronger spices such as Cardamom,etc are used in good proportion. The pungency,tanginesss etc of Hyderabadi biryani depend more on Green Masala(Chilli, Green Corriander, mint ) used.

I am from Hyderabad and this Biryani is world famous. you have cooked very well Masha ALLAH the goat mutton and beef gives the more tatste in biryani the rice should shine with ghee i felt it little dry.
