Heimdall’s entire character and story arc is about his pride. I think him continuing to fight Kratos is less “I got this” and more “I will not let you pity me or decide my fate,” as he mentions during the cutscene where Kratos takes his arm

I remember seeing a comment elsewhere about Kratos beating Heimdall's foresight with sheer experience, and you can really see it in the fight sequence here, namely with the initial punch sequence after you get him on foot. The first combo Kratos throws is wide and slow, more to feel Heimdall out and set a baseline. The second combo the blows are faster and close in, and here we see that while Heimdall can SEE the blows he can only react so fast, as seen when he has to block the left hook before jumping back from the right. Then in the third combo Kratos goes even faster, and ends it by changing his own combo (another tactic experienced fighters use, establish a pattern then break it once the opponent gets used to it) by switching the left hook for a quick grab to pull Heimdall in for that last blow. After that, Heimdall's confidence in himself and his abilities quickly deteriorates, leaving the aged God of War to use his vast experience to exploit the gaps

Honestly, I think this does a fantastic job of illustrating just how deadly pride really is. Heimdall has always been the perfectly untouchable, witty guy who can't ever be defeated or even hit. He mocks and toys with every foe he encounters because he's never been outplayed before. Then that rosy image is killed in an instant as Kratos proves he is the superior warrior, and that skill ultimately beats sass and tricks. Kratos was going to let him live, but true to form, Heimdall lashed out because couldn't live with himself anymore. He rejected the mercy, not because he was a warrior who wanted to die in battle, but because his pride and ego could not handle the thought that he was outplayed and defeated by a superior warrior. His wit goes out the window, because all that mattered was getting revenge for his wounded pride. At the end, all he could do was pitifully wheeze that Kratos was a monster, as if he hadn't decided to throw his life away to satisfy his insufferable hubris. It's really well done.

He can't see the future. He just knows what you're thinking so that he knows what you're going to do next. In a fight this just translates to him knowing where you're gonna throw the punch before you throw it.

So he basically doesn't understand the spear. Just because you can see the future, doesn't mean you can react in time before it happens. Kratos gets faster as his rage increases. Heimdall trash talks all of his opponents, threatening their weaknesses. He made the mistake of picking a fight with the one guy who only gets stronger/faster the more you piss him off. If Heimdall had done a killing blow before Kratos had the chance to speed up from rage, then this would be a different story. But Heimdall believed himself to be untouchable, because how could you possibly lose seeing the future? So he dragged it out, and learned what happens when you play with someone known to have single handledly destroyed greek mythology.

I think it's more that after a lifetime of training and fighting, instead of trying to plan ahead Kratos has learned how to empty his mind of unnecessary thoughts - making him much harder to read for someone like Heimdall who relies on reading people's minds and intentions in order to stay a step ahead
