Ktoś powinien wytłumaczyć Autorowi, że zupa o nazwie "flaczki" czyli jak nieszczęśliwie przetłumaczył "gut soup" nie powstaje z jelit ale z wołowego żołądka. Na flaki przeznacza się wszystkie części żołądka: księgi, żwacz, czepiec oraz trawieniec (największą wartość kulinarną mają trawieniec i żwacz).

No ale potocznie flaki to jelita a nie żołądek, chyba że Miodek twierdzi inaczej. Żołądkową też od biedy (!) też można nazwać zupą ale zupa o 40% zawartości alkoholu to dopiero byłby rarytas.

@@chipiron2843 Tu wkraczamy na grząski teren polskiego nazewnictwa kulinarnego. A mamy tego trochę: barszcz ukraiński, o którym na Ukrainie nie słyszano; befsztyk tatarski, którego nigdy wśród Tatarów nie było czy ryba po grecku, o której w Grecji nic nie wiedzą... 😉

@@chipiron2843 Właśnie na tym polega problem, że autor wpisał sobie "flaki" w translatora i wyszło mu "gut". A dodatkowo to ja bym polemizował, że w potocznej mowie "flaki" oznaczają jelita. Flaki bardziej bym określił jako "wnętrzności" albo "bebechy" - a to pasuje i do żołądka i do jelit i jeszcze to kilku innych flaków. :-)

There is one thing about oscypek (or maybe more than one). This one you ate isn't actually oscypek but it's called nowadays serek górski(mountain cheese). Oscypek is very unic, it got particular weight, shape, composition and it's made through particular season. If I'm not wrong, oscypek is certified local food and it can't be produced and sold under that name without certification.

Yes, 100% right. Oscypek is certified local food, so all the "oscypek" are made to taste and look like original "oscypek". That doesn't mean it's much different or worse, it's just the thing, that you can sometimes experience bad quality ones.

Of what I heard oscypek sold to tourists is not made from sheep milk as it should, hence it cannot be named "oscypek" anymore. But if theoy would do it the original way, nobody (except highlanders) would like to eat it.

@@jarlfenrir nah its some weird myth. A true oscypek is different in taste than those "fake" ones, yes, but very tasty. Its not like a difference between cow cheese and sheep cheese.

Real sheep's milk oscypek can be bought only from May to October, those sold at a different time of the year are not oscypek, because they are made of cow's milk Gut soup is not a good translation, because Flaki is made from beef stomachs, not from guts or bowel as the name suggests

@@swiety_eligiusz No tak nie do końca, bo po angielsku "Gut" to jelita, wnętrzności, nie powinno się tłumaczyć nazwy tej potrawy, flaki to flaki i tak powinniśmy te zupę nazywać jeśli serwujemy ją komuś, kto nie zna polskiego, tak samo jak jedziemy do innego kraju i podają nam jakąś potrawę, nie tłumaczą jej nazwy. Jeżeli powiemy komuś kto nie mówi po polsku, że flaki to Gut soup, zrozumie że to zupa z wnętrzności, jelit, czyli z "flaków". Jeżeli podajemy gołąbki, nie nazywany tej potrawy "little doves".

That's true. The soup is called "czarna polewka" or "czernina". It was a delicate way for the parents of the girl to refuse to the gentleman. I don't think the custom is still alive though. Do they still do that?

Another great video! I am Polish American and grew up eating blood sausage, I still enjoy it once in a while. I have never been to Poland we are planning a trip for 2024.

Blodpølse in Denmark, Mistamakkara in Finland, Blóðmör in Island, Blodpudding in Sweden, Morcilla Cocida in Spain, Blutwurst in Germany, Black Pudding in UK, it’s also popular outside of Europe. Personally Polish Kiszka is the most tasty to me but that bias because I know it since my childhood 😉 You should visit Poland 🙂

I have a Polish family who live next door and I've tried so many amazing things. Blood sausage is very tasty - whereas English black pudding is dense, the polish version tastes and has a similar texture to Haggis because of the grains in it.

The Germans make blut wurst in English blood sausage. Gut soup being spicy sounds almost like the Mexican menudo.

4:35 Lard with onion on a well baked dough based bread and with sour cucumber not only won't make you sick but tastes fantastic. Same can be said about sour soup in a bread (yes, it is served inside a bread).

oh yes, nothing bettee than such sandwich before hard work or a good party... or just whenever you feel like it. And it's so easy to make at home too :) my favorite lard is with some apple, onion, marjoran and dry mushrooms

None of the cheeses shown in this video were oscypek (which is actually quite hard to get, even in Zakopane). There were other kinds of cheese: redykołka (mostly), gołka, bundz... They're all great and worth trying. Just remember that not every cheese from the Polish mountains is called oscypek.

@@stanleyb4629 Grillowany nazywał się "Ser Górski", na straganie były "Bacowski długotrwało solony", "Serce", "Tradycyjny mało solny miękki" itd. ŻADEN nie miał w nazwie "Oscypek", ponieważ tak samo jak "miksy tłuszczowe" nie mogą nazwać się masłem.

Flaki, or flaczki, is one of my favorite Polish dishes. Just like when I'm traveling in New England, I try to sample clam chowder everywhere to find my favorite variation, whenever I travel around Poland flaczki is the one I have to start a meal with anywhere. And, I might add, probably for most Americans at least, kabanosy made with horse meat would be considered weird maybe even off-putting.

@@WitoldMakowski Yes, overall kabanosy is one of my favs. My father-in-law years ago got it from a location in Poland I don't remember. It was darker, dryer (less fat), more gamey or stringy, and the flavor was stronger.

Some of the dishes you ate are present in Czech cuisine as well: we have pickled fish (zavináče), blood sausage (jelito) & tripe soup (dršťková) for example. All known and loved. We also have a traditional delicacy called "utopenci", it is basically like our "zavináče", but you use a thick sausage instead of fish. Definitely try it, once you will have a chance! In case of brotherhood, we are pretty close with Poland on this one.

You should go to a restaurant with a Pole. He would tell you if the dish in the restaurant is good (like home made: home made always has a much better flavor) or average. "Flaki" is a dish that is made from very well cleaned, long-cooked stomachs (usually cow stomachs). Oscypek - some people eat them, others don't like them. Lard (smalec) does not cause stomach pain unless you eat a lot of it, it's almost just melted fat. It's just a very fat supplement. You have to eat it with something like bread. After that, drink something hot or drink alcohol. Marinated mushrooms - you don't eat a lot of them, it's rather an addition to dishes or vodka. Rydze and Borowiki (prawdziwki) mushrooms are one of the best Polish mushrooms in general. Herrings are not food for highlanders :) herring is a morse fish, but it is popular all over the country. Blood sausage. A separate topic. There are many varieties, and the taste depends mainly on the spices and the type of groats inside and the proportion of offal. You can find a delicious, melt-in-your-mouth, but also a cheap, disgusting product. You have many more dishes to discover. Good luck :)

Good advice. I went to a small shop looking for good Polish food (very hungry after first arriving) only to discover when it was served that it was not Polish in final presentation or taste, only had Polish words to name the dish. To this day I regret going to that one, and believe that the owner of the restaurant was an immigrant that brought a different culture to their cooking. The rest of my restaurant choices were better once I took advice on where to go for authentic food.

Two tips to enhance your culinary experience: 1. Try śledź (the fish) marinaded in salt rather than in vinegar. It has more natural taste (not so dominated by a marinade) and nice springy texture. It comes best in its simplest form, just with onion and vegetable oil or sour cream. 2. Kaszanka (blood sausage) can be grilled in whole as you had it, but to me it is much better when mashed and fried on a pan with onion and seasonings (mostly majoram and black pepper)

That soup is made in whole europe, also in Germany, France, Italy, Turkiye. But they just seasoning that different than we do. Check out the German version - Kuttelsuppe, or Saure Kutteln on youtube. I also taste it and it's delicious like Polish, however taste different than ours.

"Gut soup" is a standard workday lunch fare in Croatia, especially Dalmatia. French make it in several quite different ways, depending on the region. In Bulgaria and Romania they cook it with milk. I also never heard about marinated oscypek. And man, you missed a good one! Fresh bread, with the lard with onions and salt sprinkled over it - perfect. Called "chlyb z fetem" in Silesia haha

Lard especially with sausage and onion is the best you can eat (on fresh bread) when you drink strong alcohol, just add some salt and pepper to it and you will be amazed of its taste and how strong your organism will become in terms of drinking e.g.: vodka :)

It's tripe not gut, which is the muscle and connective tissue of cows stomach with the inner part of the stomach removed, washed, pre boiled to get rid of the strong smell and then finished cooking with spices and aromatics. It's actually very tasty and the texture is uniquely unlike anything else. Lovers of beef texture will love this one.

Hey, just to clarify, gut soup is not literally made of guts, as in intestines, although pretty close. It's made of beef stomach, more precisely the rumen, reticulum, and abomasum. Sometimes, although less often, stag or pig stomach might be used instead.

The thing about OSCYPEK is that it is hard to come by even in Zakopane. What you buy in typical tourist locations are counterfeit oscypek most likely made of cow milk. Real oscypek is made of sheep's milk mostly (minimum 70% required for certification), is hand-made and smoked and can be obtained from the head shepherds at their huts. Best way to find one (the shepherd's hut) is to ask local craftsmen (if you ask local sellers at tourist spots, they will most likely mislead you to get some of your money). Basically if you see a shepherds hut with a smoke house then you know you are in the right place. Regardless of its cow/sheep milk ratio, they are definitely worth trying and are lolovely cold or hot. My favourite is sliced oscypek from the frying pan.

Oscypek is a cheese made from sheep milk. It's really hard to get those, and You can buy them only from may to september (when sheeps feed their younglings). Because Zakopane is a tourist trap, cheese is made of cow milk and sold as original one. And because production must be continous, even in summer season those fakes are being sold. Sad but true. Visit Tatry, skip Zakopane ;(

so good but you've been to Zakopane, there are a few areas in Poland where people, culture, and variety of word pronunciations differ significantly from standard Poland. The largest and most popular: Kaszuby, Śląsk, Zakopane (most of the mountains). Each of them has a different folk dialect, culture and character. Zakopane is inhabited by people called Highlanders, they have their own highlander dialect, which in pronunciation and other vocabulary differs from ordinary Polish.

The thing with chernina (duck blood soup) it is very hard to find a place that really can do it right. Similar thing with flaki, the gut soup. Not every place serving them makes them right, however it is easier to achieve than with chernina.

Blood sausage is pretty common dish worldwide, for sure it is eaten in France and Spain as well as in numerous Asian countries. I think gut soup is also present in Spain. As for raw herring, it is pretty common dish in Scandinavia. Pickled mushrooms are also available in Germany and, like most of the pickled food, you do not eat them alone . From what I heard from my foreign friends, the most strange thing for them to eat in Poland seems to be soured milk - some people do not even dare to try it.

Great video :) I really enjoyed it while eating breakfast :D Blood sausage - UK has similar thing called "black pudding" ;-) Gut soup - i think proper name is "Tripes" :) You`ve got two types of oscypek :) Mixed and Sheep`s milk only. Always ask :) Main difference in the taste is that Sheeps one is usually littlebit more expensive, have more salty taste. Not everyone likes that saltiness that`s why they mix it with cows milk. People pickle weird things. When I lived in UK they pickled eggs :D In Czech Rep. they pickle sausages - they call them Utopenec(great in a Pubs as a snack when you drink beer) :D

Gut soup is a rather crude translation. The official name would be tripe, or tripe soup. Lard is delicious, true i would be weary of buying one with additives (best and only proper one is obtained by way of babcia). But a pure lard is hard to screw up. With dill pickle on a "pajda" it's great. Also you missed pork knuckle and beef tartar - both great Polish classics. As for the american angle, Cracow bagels with salt are both good and "unorthodox" variation on the bagel.

Bagel Bakers Local 338 in NY was established by Polish Jewish immigrants from Białystok, that's why NY bagels are like general _bajgle_ not it's Kraków variety _obwarzanki._

Tripe soup is actually well known all around europe with every country having its "twist" on it. It is more common in eastern Europe but you can find it in Germany, France, Belgium as well :) And about that lard - It would not make you sick ;) Its actually pretty good with freshly baked bread and some "pickled" cucumber - give it a try mate ;) Check out "czarnina/czernina" as well ;)

Mniamsiu,cudowne,marynata to z maślaków i dużo gorczycy coś pięknego,śledzika z chrzanem nigdy nie jadłem,oscypek dobry na zimno i bez dżemu.,a kaszanka (krupniok na Śląsku)lub bulczanka (to to samo,bulczanka jest z dodatkiem bułki)mogę jeść nawet prosto z sklepu bez podgrzewania grillowania,aa i flaczki muszą być też z odrobiną octu. The problem is, the American has just no taste about food. Only fatty junk food everywhere. America has way more than just junk food. Not everything is greasy. Pot roast, good steaks, salads are popular, shrimp cocktail, salmon patties crab cake , stews and so on. There are many ethnic restaurants as well as American with some ethnic foods. Many diners (often owned by Greeks, at least in some parts of the US) have lemon rice chicken soup, and things like fried liver with onions, various sandwiches etc.

For all of you who may want to eat something really regional in Zakopane - you definitely need to visit Obrochtowka restaurant. Its delicious, its regional, very cosy and has great atmosphere. And they have wonderful „placek obrochtowka”. Strongly reccomended!

Marinated mushrooms are appetizers not a main dish to eat alone. They are best with roasted meat, sometimes as a part of a salad. Unless you eat it with vodka. Actually in Zakopane it should be Śliwowica (en.wikipedia.org/wiki/Slivovitz ) (plum vodka ~70%)

In USA, in the Polish-American Community, Kaszanka is also known as Kiszka. Funfact: In Poland, we have two types of Blood sausage. Kaszanka, a Sausage made from blood, white rice and pieces of liver and "Krupniok" - traditional Kaszanka from Silesia. The difference between them is that "Krupniok" have a piece of loaf inside.

Very good Polish pronunciation! I thought you were born in Polish family in States and spoke Polish at home. It's not "pickled fish". It's "pickled herring". Yes, one can argue that herring is a fish and therefore either is correct. I've never seen any other fish prepared this way though. To a Polish person in terms of food, a herring is a herring and a fish is any fish other than herring. Kinda like pieczarki are pieczarki and grzyby are any other than pieczarki. In English it's all "mushrooms" and only kind of mushroom an average person ever sees in average store in States are pieczarki. Sometimes I've heard word "fungus" used in reference to other grzyby but they are rarely seen or talked about. Anyway, going back to herring rolls, you don't unroll them. You lay them on a side, stick your fork in it and slice so that you end up eating both herring and cucumber together. You could put some horseradish on top. Usually there's more than just a cucumber inside of the ones I like. This may be regional, but the way I like kaszanka the best is to fry up some onion, remove kaszanka from casing, slice it and mix with onion, fry some more and serve with mashed potatoes. I would not eat it by itself slice by slice. I tried some Puertorican blood sausage here in Chicago. I like it better than Polish because it is spicy. The guy who served it to me had a funny look on his face as he watched me eat it. I guess he thought I was American and would puke it out once I learned what it was :)
