I am a hyderabadi and i know how hyderabadi biryani is made. We have been brought up eating it almost every week .. and i can say u have executed the recipe very well . Authentic hyderabadi way . But no kewra essence is used in hyd biryani and last thing added is saffron milk the yellow colour is from that .👍

Masala mixture was good There are few suggestion for the perfect dum 1. Do not add any water to the masala (if you could see your bottom layer of rice got soft coz of water added. Instead you can add saffron soaked milk at the end which will give color and saffron flavour to your rice and will not let your masala get burn. 2. Pour pure Buffalo Or cow ghee before you seal the lid which is must in hyderabadi biryani 3. Replace zeera with Shahzeera ( zeera is never used in hyd bir) Love from Hyderabad Deccan

This could've been more flavorful if you would have added kewra water and desi ghee....but anyway nice explanation and recipe. One tip/trick from my side, while boiling the rice just add ginger garlic paste, coriander and mint into it and feel the great flavorful rice...I'm not a professional but preparing a biryani recipe in home since 6-7 years. Finally gained knowledge of fine tuning of spices..

Assalamualaikum. I am from Hyderabad India, please don't mind your recipe is wrong, I am also a Chef. Let me explain you how to cook Hyderabadi Biryani. In Hyderabadi Biryani we never use coriander powder and cumin powder. In garam masala we don't use black pepper either, the most important ingredients are good quality of mutton or chicken good quality of basmati rice, and most important is pure ghee, and saffron without these Biryani can't be made good , and we don't use whole garam masala in marination only powdered masala, process of your making is ok don't use black cardamom in boiling water and the last don't use kewra water also as it will suppress the taste of Biryani. I like your recipes.

1. Dont fry onion too much otherwise it ruin the taste, just little brown the onion 2. Dont add kewra that is lucknawi biryani style, 3. Add shahzeera instead of zeera, zeera is never used in Hyderabadi biryani 4. Add 1 cup saffron soaked milk on rice before dum 5. @@alimukrams I was disappointed when he used yellow color instead of zafran milk.. And asli ghee ni dala.. Kewra water ni dalte and zeera is a big no.. Shahzeera ni dale ino..

Assalamualikum warahmatullahi wabarkatuh bhai mashaAllah aap bahot bahot pyare tariqe se samjhate hain main HYDERABAD se hi hoon kacche papita ka paste sirf beaf ya mutton ki biryani main use karte hain kiyun ye gosht galne main time lagta hai pipite ka paste isko galane ka kaam karta hai chicken ka gosht to bahot jald galjata hai is main papite ka paste lagane ki zaroorat hi nahi padhti is papite ka paste jitna kam istemal karein utna hi accha hai kiyun kaccha papita bahot garam taseer hota hai🌼🌼🌼👍
