Kurnik🥧
🥛Paired:
300 ml milk (10 fl.oz)
150 g flour (1/3 lb)
20 g sugar (0.7 oz)
15 g fresh yeast (0.5 oz, or 5 g dry)
🥛Prepare the sourdough.
1. Mix milk, sugar and yeast.
2. Add the flour through a sieve, mix until homogeneous.
3. Cover and place in a warm, draught-free place to let the sourdough rise.
🥄 Dough:
pastry
500 g flour (1 lb +1.8 oz)
100 g butter (3.6 oz, 82%)
100 g eggs (2 eggs)
40 g sugar (1.4 oz)
5 g salt (0.5 tsp.)
🥄Prepare the dough.
1. Mix together the sourdough, eggs, sugar, butter, flour and salt. Mix until smooth.
2. Cover and leave in a warm place without drafts for 1.5-2 hours.
🍗 Chicken and mushroom stuffing:
one chicken (about 2 lb)
300 g mushrooms (10.7 oz)
one onion
10 g butter (0.4 oz)
10 g vegetable oil (0.4 oz)
salt and black pepper to taste
🥚Stuffing with egg, rice and herbs
150 g boiled rice (1/3 lb)
3 eggs
100 g green onions (3.6 oz)
dill
salt
🍗 Prepare the stuffing with chicken and mushrooms.
1. Boil the chicken in salted water until tender, separate the meat from the bones and cut into small pieces.
2. Mushrooms and onions cut in small pieces and fry in a mixture of vegetable and butter oils. Season with salt and pepper.
3. Combine the chicken and fried mushrooms and onions, mix.
🥚Prepare the filling with rice and egg.
1. Slice the eggs into small cubes.
2. Finely chop green onions and dill.
3. Combine all the ingredients.
🥞Batter for crepes:
190 ml milk (6.3 fl.oz)
50 g eggs (1 egg)
100 g flour (3.6 oz)
1/2 tsp. sugar
salt
30 ml vegetable oil (1 fl.oz)
🥞 Prepare the crepes.
1. Mix milk, egg, vegetable oil, salt, sugar and flour. Mix until smooth.
2. Fry the crepes.
🥧 Form the kurnik.
1. Skim the dough, separate 1/3 of it and roll out into a circle of 26 cm diameter.
2. Place 1/4 of the chicken filling, flatten, cover with crepe.
3. Spread 1/3 of the rice filling, flatten, cover with crepe.
4. Alternate layers of toppings, overlapping with crepes. Do not cover top layer of chicken filling with crepe.
5. Roll out the remaining 2/3 of the dough into a thin circle and cover the pie. Pinch the edges well.
6. Make a hole in the center of the pie at the top.
🥚Glaze:
1 egg yolk
10 ml milk (0.3 fl.oz)
Mix the egg yolk and milk together.
🥧 Decorate the kurnik.
1. Cover the pie with a thin layer of icing.
2. Make decorations from the remaining dough and decorate the top of the pie.
3. Cover again with icing.
4. Pop it into a preheated 360F oven, with convection, for 40-45 minutes.
5. Cover the pie with a dry towel while it's warm.
