Surprisingly, widely used (poor)cold pressed Mustard oil, which contains better ratio of pufa/mufa than olive oil , does not get any attention whatsoever.

Well the reason being its not been internationally used. that's the reason even in India no one discusses it. Moreover in India people follow only those things which USA or UK says... there are no studies conducted in India for mustard oil... May be lots of poeple do not know that on USA UK they eat a lot of crushed Mustard ..however in India we do not because they never told us. Olive oil used in Mediterranean diet as a salad oil....they just put a cup of olive oil in the salad and eat it and they have been using it whether its good or bad they will never say as westerners feel every thing they consume is the best...which is not correct. Indian diet I think is best as it contains everything right from protein to vitamins to carbohydrates to fats .. which is needed for the body ..

Hope you’re aware that India leads the world in both DM2 (diabetes) and cardiovascular disorders (heart diseases) and strokes (paralysis and associated neurological disorders). And, all this is directly linked to the lamentable dietary practices - dominated by extreme use of refined carbohydrates and deep-fried foods in general. This is at the most equal to or worse than SAD (Standard American Diet). Please note that the West doesn’t use any mustard oil as it may pose a serious risk because it contains high levels of erucic acid. This monounsaturated fatty acid is present in several oils. In small doses, erucic acid is safe, but higher levels may be dangerous. What is consumed as mustard seed in cooking/eating has negligible amounts of erucic acid. Also, for largely economic reasons, Indian families, food outlets and restaurants use highly processed BAD cooking oils REPEATEDLY - making them absolutely unfit for safe consumption. It is not that the West dismisses food items of Indian origin as bad unnecessarily - in fact GHEE, butter and coconut oil are highly recommended these days. Ironically the best fat for cooking (highest smoke point) is Avocado Oil - far too expensive for most Indian families, and generally not available at most Indian retailers.

All PUFAs and MUFAs of Mustard Oil are still UNSATURATED, and quite unstable at the high temperatures at which we use this oil in Indian type of cooking.

घी जो वेस्टर्न वर्ल्ड ने भी best बता दिया ह वैसे तो घी को किसी के सर्टिफिकेट की जरूरत नही ह लेकिन कुछ so called पढ़े लिखे भी अब घी पर उंगली नही उठा पाएंगे।। घी म फैट भी short chain amino acid वाला ह जिससे इसका saturated फैट हार्ट के लिए अच्छा है नाकि खतरनाक

Sir extra-virgin olive oil, though very healthful, can't be used for high temp cooking like ghee/butter. Extra-virgin Coconut oil (MCTs) is very good too for low temperature cooking. All factory-produced Oils (of any variety) are very processed and not good at all - they contain far too much of Omega 6 than Omega 3 oils - both of which are destroyed during high temperature cooking, increasing oxidative stress far too much.

Point No. 1, it's true that Olive oil is good, but when it heated it's start loosing nutritional values. In Mediterranean countries they use it's mostly on Salad seasioning. No.2 :: Ghee is good but which one. Answer is which comes from our own country's Cows. It has a science behind that.
