Grievous was a Kaleesh warlord. His people were being taken as slaves by another race (I dont remember the name) and when his people fought back the other race turned to the Republic for help. They saw the Kaleesh as barbarians and helped to defeat them. This is where General Grievous's hatred for the Jedi began.

At least there was justification for grievous getting his ass kicked and being a bit less confrontational in episode 3, at the end of this miniseries, Grievous gets his chest crushed by Mace Windu, damaging his vital organs *ALL OB DEM!?* and it left him also weezing, his ribs were used like a VICE after all.

Dooku left after the jedi vs Mandalorians on Galidraan I’m pretty sure. i believe also where he first saw Jango Fett and he killed 6 jedi with his bare hands. The jedi were fed false information about the mandalorians by death watch (at the time a radical splinter group within the Mandalorians) saying they were killing massive amounts of civilians when it was death watch framing them. Jango was the only survivor I believe that’s what made him see the error of the jedi and forced him out since he was chosen to lead the mission against the Mandalorians. This is from Star Wars Bounty Hunter game and Open Season comics (old cannon now) that showed why Jango was chosen as the clone template and some of Dookus backstory

Grevious was a Kahleesh general who got blown up by Dooku and Dooku made it look like the Jedi did it. Also Heir to the Empire ended up getting retconned where it was Grievous face armour on his desk. I think it was his actual bone armour not the droid armour. Obviously that’s all Legends

Dooku left the order after the death of Qui Gon. He was Qui Gon’s Master and felt the Jedi we’re responsible... I never really understood his reasons for joining the Sith though. It kinda seems dumb after they killed his former Padawan.

People seem to forget how well done the clone wars multi media project of the 2000s was (by that I mean this show, dark horse comics, books games etc). They all felt consistent and connected and really bridged the gap between ep 2 and 3
