HOMEMADE MUESLI & THE POETRY OF THE POMEGRANATE (Healthy Sugar-Free Breakfast in Tuscany, Italy)

This week I'm celebrating the decadent pomegranate and sharing my recipe for homemade sugar-free muesli for a healthy way to start your morning. We always made muesli growing up in my family. Come toast coconut and almonds with me by candlelight and then wander in the garden of the church on the farm in Tuscany and pick ripe fruit to have with colazione.

Thank you Kylie for mentioning that pumpkin seeds (pepitas) are beneficial for prostate health. Another delicious way to ensure the males in your family consume pumpkin seeds, is by making your own vinagrette type salad dressing, using a tiny amount of pumpkin seed oil instead of olive oil. -French mustard (small amount) -Balsamic vinegar -Lemon juice, -Honey -Pumpkin seed oil (very tiny amount... you don't want to be too "regular")! Use the best quality ingredients available. I let others add salt/pepper to taste. Pumpkin seed oil is a exquisite green colour, it adds a different flavour dimension to your regular salad repertoire. It is a higher price point, but well worth it. It must be stored in the refrigerator once opened, to retain the nutritional value and taste. If you can't find it in your delicatessen, try an Asian grocers. Lovely video. I’ve made my own granola for years. I give it to friends and family for birthdays and Christmas. I used to buy pomegranates for decorations but never ate them because I was intimidated by getting the seeds out. A couple of years ago I saw a blog post somewhere showing how easy it was. Simply cut it in half at the “equator” , turn it over a hit it over a big bowl with a wooden spoon. So easy!

Please be aware that whole flax seeds will just pass through your digestion whole, to have the full benefit they should be broken first, otherwise their powerful nutrition is not available. And I believe it's hard to chew so much that they all get broken, so easier to add them broken at once. I love melograno! Another powerhouse nutritionwise!

What serendipity! I literally was just speaking today about breakfast cereals, yogurts and such with my employer and friend, a monk, asking what the monks like to have with yogurt. (I am a cook for their Infirmary in Massachusetts USA, though not familiar with all the main community eats.) He said that one of the younger monks occasionally makes granola, another makes kefir for those who like it. I've lived in Europe and told him that yogurt is sold in milk cartons and had he ever heard of muesli. I occasionally make things for the main community, I most definitely will make your recipe.
