There is no "best BBQ in the US." BBQ variations are very regional in the US and each region likes their variation the best. I've lived in Kentucky, Georgia, North Carolina, and Texas, and I like them all and they are all different. Saying some BBQ is the best in the US is like saying that some version of chicken is the best in Europe. Appreciate each for what they are and don't try to compare.

@@KS-ip5xn I've had Memphis, Nashville, Raleigh, Atlanta, Dallas, Austin, and San Antonio BBQ at local joints within those cities. I've only had KC Ribs at a chain restaurant, so that's not a fair comparison. I can't say that any one is better than another, but I can say the brisket and sausage are better in TX and Pork is better in the other states IMO. The sauces vary greatly from region to region, all being amazing!

British beans have a tomato based sauce with garlic, onion, sugar and a vinegar. American baked beans have a wider range of spices and sweeteners. Folks rarely just take them out of a can and eat them straight; they add stuff. In addition to white sugar, you will find brown sugar and/or molasses. Mustard powder is almost always added. Bacon or fat back is usually included. Cider vinegar or wine vinegar is often used in place white vinegar. There may be cayenne, jalapeños, or hot sauce might be added. Also in some areas if the country, beans other than great northern or navy beans are used. In Texas and parts of the south the beans might be pinto. As for beans on toast, we had the Revolutionary War for a reason. The Founding Fathers may have been fighting over taxation without representation, but the common man was trying escape beans on toast. 🙂

You're going to want to know there are literally millions of people in the US who can cook amazing things. I went to a "cook out" in Coeur d'Alene Idaho and a local farmer had a fully grown pig that got slow cooked with all sorts of vegetables and spices wrapped in metal foil seet on burning coals and literally BURIED in the ground. When I got there the pig took up the full length of an 8 foot table and we selected what meat and veg we wanted out of the foil wrappings. It was unbelievably good. And that was just a local with a farmhouse, not a restaurant for miles around.

Exactly! I love Puckett's but there are better places around here. That being said, most people can cook better than any restaurant. We take cooking seriously in the south. In addition to a regular kitchen most of us have some sort of outdoor kitchens with smokers, charcoal grills, gas grills, and/or Blackstones. Our outdoor kitchen setup is a small fridge, wine fridge, kegarator, ice maker, electric smoker, pellet smoker, Green Egg grill, gas grill, and a Blackstone. We also have a stand alone turkey fryer/seafood boiler gas burner. Smoking low and slow keeps your food full of flavor, tender and juicy.

Americans never eat beans alone. We eat them as a side or inside a dish (red beans & rice, chili, or bean & cheese burritos) which are not in a bbq base. The Beans you eat in the UK is in a light tomato base. We don’t have those beans in our grocery stores. You would need to make them at home to get similar UK-style beans you eat on toast. Most beans in America are in a bbq sauce base. They have completely different flavor profiles.

This particular Puckett's is in Franklin, Tennessee. The original location is in a small town west of Nashville called Liepers Fork (pronounced Leepers) . It started as a local gas/petrol station. Things to remember about BBQ: 1. BBQ meats, cooking methods and sauces vary by region and even state to state. 2. Smoking the meat is key in Texas and other areas where BBQ is smoked with low, indirect heat for on average 10 to 12 hours. Another important factor in smoking meat is using different types of wood such as mesquite, apple, oak, maple etc.. will change the flavor of the finished product. 3. Rubs, marinades and sauces are important and will definitely vary from region to region and even restaurant to restaurant. Southwestern States often do not use sauces and rely on on the “dry rub” or “moist rubs” of spices and herbs that are applied to the surfaces of the meats and then are allowed to “rest” for varying periods of time. If there is a sauce, the ingredients will vary and are usually tomato or mustard based (tomato sauces are usually used in the southwestern regions and mustard- with a dash of vinegar are often found in the southeastern states. 4. NONE of these methods are set in stone. There are secret smoking methods, rubs and sauces that are sometimes developed over years and are family secrets as treasured as jewelry and homes. I personally have been experimenting and perfecting my BBQ for more than 40 years. The best places to eat especially in a country as big as the United States are 100% personal taste and opinions. I would recommend that if you are going to be visiting more than one region, you try the same foods to explore and experience the variety of food preparation. Please remember that the best places to eat may be hidden away and may not be the most expensive or dressiest places. Chain restaurants will taste pretty much the same no matter where you are so eat that stuff if you are pressed for time or simply want something that tastes familiar. Good luck on your “grazing across America adventures”!

They don’t eat it as a breakfast food . Funnily enough , when they have beans with their breakfast they have it as a side , and they also have toast with it . And eggs , and a meat , and a “ pudding “ which is like nothing we have that I can think of . Beans on eggs on toast is a meal and it’s stacked on top of each other so it seeps into each other , like our biscuits and gravy , . It’s really a cultural thing like. PBJ here . You should try it for lunch one day , but I’d get either campbells or vandekamps beans , bacon on it or sausage or any kind of meat you’d like . Hot dog obviously . But put an egg with runny yolk on top . In Illinois , we have horseshoes , we make French fries. , on top of toast with hamburger or any meat topped with cheese sauce , they’re delicious . We also have a haystack or breakfast horseshoe in which we have toast or waffle , then hash brown potatoes then meat then gravy with egg with runny yolk on top . It’s delicious

So, if you don't like it one way, you can go somewhere else and order the same thing and have a different recipe; therefore, different food. I think that is why many people have stated, "Don't knock it till you try it." It is a familiar saying across the US because all of the recipes are so different from area to area.

Remember, gravy is made with meat drippings. When you start with meat that tastes this good then the gravy has to be just as amazing. Potatoes are potatoes, they are just a conveyance medium for the gravy. jdn forgot to mention that the regional variances can be grouped into a few categories like Carolina (predominately made with mustard and vinegar) or St. Louis (brown sugar based) or even cajun (pepper based) or Tex-Mex (tomato and cumin predominate). But every smoke house has a pitmaster that was tutored by someone and they all do it differently so yeah, find a flavor profile you like best and roll with that.

So generally we're not eating baked beans just straight out the can, we will add things to it, I like to add onion, bacon, mustard, b-b-que sauce, molasses and a little bourbon. Potato salad, they're dozens of different recipe for potato salad. Potatoes (I like red potatoes or Yukon gold, but you can use russet), onions, celery (optional) sweet pickle relish, grated boil eggs, mustard, a mild vinegar (like rice wine), mayo, salt, pepper, paprika

Back in the day, I learned a little trick from an Alton Brown cooking show. Use Yukon Golds or red potatoes. After you boil your potatoes, put them in a plastic bag with about 1/4 c of cider vinegar to cool in the fridge overnight. This adds some flavor to the flesh of the potato. It bring the dish up a notch. I also like to use a whole grain mustard. Personally, I favor a more sour pickle. A touch of powdered chipotle chile adds bit of a kick and some smokiness.

I know a guy who did not like catfish, but one time at a card game I cooked some catfish fillets for everyone and he tried one, and he liked it. He said it was the way I cooked them, and the breading I used that made them so good. He had catfish before, and it was not very good. But when he had catfish the way I cook it, he liked it. I use catfish fillets, fresh ones, never frozen. I soak them in a milk/egg wash for an hour or so, and then I bread them with Andy's Red cajun breading, you can get it at Walmart. Then I deep fry them in vegetable oil at 400 degrees for 7 minutes, and they come out nice and crispy and golden brown. Then I pour some lemon juice over them to eat them, and they are awesome.

There are so many BBQ styles, my highlights: Alabama, Texas, Memphis, Hawaii, St Louis. There are many variations, but of the ones I have tried, those are my favorite. Hawaiian pulled pork is amazing, but so is Alabama's. I have always had dry Tennessee BBQ, but that doesn't mean it's not as good, I just haven't found the good places. St Louis style ribs are pretty much the standard, imo. And the grilling in the SW is top notch. And there's a lot of amazing grilled and smoked seafood on both coasts. People have been grilling salmon on cedar planks, roasting crab, doing clambakes, and seafood boils for thousands upon thousands of years. Basic stuff, but great. And spitted game is done well across the West. Antelope with apricots and sage is pretty next level.

As for mashed potatoes and Gravy, it is butter, a dollup of sour cream, a little white cheddar, white pepper and garlic in the potatoes and key is to leave the skins on while boiling the potato. Then you season the gravy with black pepper, garlic, salt, a couple of dried herbs like basil or thyme. Try it. It seriously elevates mashed potatoes and gravy.

Some of it comes from the ppl in the area, certain states have ppl that migrated from different countries so their culture has influence! Worked for a BBQ shop that won many awards for years........the best meats use no sauces......its all in the dry rub seasoning before cooking, and the types of wood used to cook over. Brisket, pork shoulders, took up to 18 hours to cook. Ribs around 8-10, and chicken around 6-8 hours. I prefer hickory and oak wood 50/50 mixture. The beans are usually so good because they use drippings and chunks of the beef and pork in them.

I live in the Franklin TN area, which is in the southern part of the Nashville Metro area. I love Puckett’s…but it’s NOT the best barbecue in America. I was born & raised in Texas, so, yeah…there’s that. However, every region in the southern US has absolutely wonderful barbecue that folks from all over the world may consider, “the best”. Texas, Tennessee (Memphis, etc.), the Carolinas, Missouri (St. Louis)…and more. Every region has their own style. Texas does beef primarily. St. Louis does a range, but are well known for ribs. Memphis & TN are big on pork barbecue in general. Alabama has incredible barbecue chicken & pork & make a unique “white sauce”. Just come to the south & enjoy it, because there will always be an awesome place to go if you’re not shy about asking the locals…they’ll happily help ya out.
