The real reason why they were closed down from those events was because the smoke from their smokers was in a residential area, where it agitated the people who lived in the homes. Wasn't against the meats, just certain codes that prevent people from smoking in certain areas. The meat looks good though 😍

i don't know why this is phrased as some STICK IT TO THE MAN story by the title when it's actually a case of people understanding how health codes work. i mean there's a reason these codes - in all industries - exist and it's almost invariably down to someone getting hurt, sick or even being killed. i don't know about you but i'm glad these people got their acts together and got to be the cool food truck people and not the 'accidentally incubated botulism and now all their customers are sick' people.

Did you watch the video? They have a commercial grade food kitchen now, where I imagine they do most of the smoking at (smoking the meat is a long process), and then take it to their food truck locations to be finished and sold. That or they do all the cooking at the kitchen and just reheat/sell it on site, which is also possible.
