This famous dish is iconic of northeastern Thai cuisine, and it's probably the healthiest chicken salad I've ever seen! A few years ago I made a pork laab video, this time I make it with chicken with lots of new tips and tricks to help you make a laab to impress! And that crazy good crispy chicken skin makes an appearance at the end as well :)

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Pailin don’t use endive. The bitterness of endive is rank. Yes there are bittersweet leaves like cabbage or even cos. Italians for example don’t drink bitter drinks with radicchio (endive) even when cooked

I love laab. I discovered it in the late 60's while living in Ubon. One of my go to orders at my favorite Thai restaurant here. When someone asks me what it tastes like I tell them it tastes like spring!

Pailin! I did it and it worked perfectly. I discovered you while visiting in Thailand and wanting to cook some of the great Thai food I was enjoying there. Now I am back in Canada and trying this dish again. Harder to get all the ingredients but have most of it. Having to substitute cilantro for the sawtooth coriander. I like that you tell us about possible substitutes when you're cooking. Love your show! Thank you

Thank you!! I was addicted to this when working in Amarillo, Texas, where a Thai restaurant had the best food I ever tasted. That was 15 years ago. Your recipe looks like what I had there. Going to definitely try this out.

The mixture of sheer good-natured charm and really insightful information makes your site and videos so special - thanx. Say, what kind of chilli would I want to get hold of for the roasted flakes? The longish, not so spicy kind that goes into nam prik pao? I only have a Chinese supermarket here, large though, and they don't speak Thai I'm afraid, so Thai names are no use. It is often quite a pita to find the right ingredients.

I have been chasing my own shadow for years trying to figure out exactly what ingredients are coming together to create the magic in a ton of amazing Thai dishes. You have opened my eyes to a whole new world. My life will never be the same again. 🙏🤗👍 The only dish I have not see anywhere is a soup I used to order regularly at a Thai restaurant. It was a simple brown broth soup. I used to have it made with chicken meat. The broth was brown in color and had slight anise overtone. It was intended as a noodle soup but I would always order it without the noodles in it so I could eat it with a side of rice instead. It had bits of fresh broccoli in it and you could put your bean sprouts in it as well. One of the things I distinctly remember is they would also place a small scoop of golden garlic crumbles on top. (Yum!). The broth had a slight subtle sweetness to it. It was always served in a pho style bowl. Does anyone on here know what I have described above? The closest thing I could come up with was maybe a type of boat noodle soup.

Noodle without noodle is called Gaolao/ เกาเหลา and the chicken soup for this noodle should be Stew chicken/ไก่ตุ๋น (search the thai words to see the pictures)

Bro the thing you ask for is not the simple thing at all The brown soup in Thai noodle have at least 8 ingredients I try to search the recipes in English and I find 0 Mach with real thing So I gonna translate the No.3 soup from this link cooking.kapook.com/view124029.html in the comment below ( The name of soup is hightlight with blue so you can find the blue highlights that start with 3 to see the picture )

I remember when I was little I had to fry the rice for my mom !! & pound the rice out till it was fine .. like for hours !! Lol I couldn’t understand it till now 46 lol I need it to use for Lao / Thai cooking !! Ty ty for sharing ..🙏🏽🥰

In Trinidad, we call sawtooth coriander shandon/chandon beni also bandanya. So you can find it in West Indian groceries. When I lived in NY, I found it at Latin grocery even Chinese grocery stores, it was called "recao" soooo good!

As someone who is training in Muay Thai along with Brazilian Jiu Jitsu, Trying to Mimic how the Muay Thai Fighters in Thailand eat with their Diet and I must Say Thai Food has so much choice with the Healthy Options and it is very Flavorful where I never get bored with the food. Of course I try to control my Portions as I'm trying to improve my Physique. But Laab Gai is my Favorite salad to eat along with Som Tam and Chicken Satay (Of Course cutting the Peanut Sauce and Eating the Chicken with the Som Tam). Now I can make one of my Favorite dishes for Meal Prepping along with the Som Tam. High Five and Kob khun kha!!!!

Sawtooth coriander is also found in a lot of markets in Hispanic neighborhoods as culantro if that helps anyone!

Pretty much how my wife makes it, except they blanch little strips of chicken skin and add them to the laab (Laotian version?). They curl up into little circles, personally I don't care for them, so she makes mine without. It's nice to be loved. :)

I watched this and laab wonsen video. Then I also watch marion's laab video. I ended up making it for my dinner using konjac noodles. Taste good and the only thing I can say is don't be shy on chillies and coriander. It's so yummy!

When my first wife and I first got together we lived in Prachuap in the peninsua, tho we were in the South, I really got hooked on more of the Issan cuisine. Laap moo was my favorite, tho the chicken is just as awesome. Pai, I wish you'd do a video on Som dtum mamuang. I loved the green mango salad I used to eat in Suphan Buri later.

yum yum yumm!!!! that reminds me of the labb phed (pork mince & different bit..) i had that few years ago, but the restaurant had the chilli & lime leaf lightly fried after roasting and also a bit of the galagal as well, so the the herbs fragance infuse with the oil....omg the flavor were just magical, once u try laab phed u wont go back to the regular laab again.

I’ve found sawtooth herb at H Mart under its Vietnamese name - gno gai. Good pho places offer it on the salad plate, along with the basil and bean sprouts.

hi pai! i just wanna say ur videos are really great and it is my automatic go to vid whenever im craving for thai food especially with salads.. i just wanna ask, instead of the oven, can i just dry the chilis in the sun then dry roast it in a pan? im planning on making larb and nam tok soon so im really keen if my idea for the chili will work

BL@iRdEE Yes, that is how Thai usually do it.But when you roast it in a pan ,be careful ; the smell and the smoke is very strong. Do as Ms.Pailin does---keep your face a bit far from the pan.Better prepare some cloth to cover your nose and eyes.

Is sawtooth coriander the same thing as culantro (not cilantro) that Puerto Rican cooks use a lot? I’ve been looking for it but haven’t been able to find it where I live.

Wow! That was great. There is no other dish, other than Som Tum, that takes me back to Isaan in my heart and head better than Laab! I also learned the meaning of "ruan" which I had looked for years ago in a dictionary and never found. In Lao "Laab" is spelled the same as good fortune which seems appropriate as it is a meat heavy dish in a part of the word that tends to be quite poor at least in dollars (but rich in culture, flavor and graciousness. I am going to have to get some saw tooth coriander seed. In the US most people leave the garni uneaten and the veges around the laap often get ignored. I am thinking of making a Miang version of this for a potluck tomorrow. Kawp Jai Lai Lai

I'll say if you add a bit of galagal, your laab will be even better. But my ultimate process of doing laab, I'll stir fry chicken with onion and lemon grass...Good show , love your videos
