If you find red shiso at the store, make delicious shibazuke.
Homemade Shibazuke is tart and nourishing!
It becomes delicious in a week.
If you rub the red shiso with salt first, the color and flavor will not come out as well, so the key is to combine it with vegetables as it is and let it sit for an hour.

𓍯 Ingredients for shibazuke
100 g red shiso
2 eggplants
3 cucumbers
2 myoga
24g salt (4% of total: 500 for eggplant, cucumber and myoga)
𓍯 Celery with shibazuke
I used celery instead of eggplant, cucumber and myoga.
One week at room temperature,
Ferment in a well ventilated shady place.
After a week, put it in the refrigerator.
Shelf life: 2 weeks

紫蘇はアク抜きをすると葉の裏に着いた紫蘇の風味がなくなります。紫蘇を熟知した本当の漬け方ですね。

うわ~凄くシンプルで簡単ですね😆 みんな赤しそはこれでもかというぐらいあく抜きをしますが私は疑問でした。そんなに出したら旨みや栄養が全部出てしまうんじゃないかと。 やっぱりあそこまでしなくて良いんですね!! 初めてのしば漬けこのやり方で作ってみます❤
