For the sake of preserving the wooden agitators in a food-safe way, you could treat them with olive oil. I use it for my wooden steak knife handles and whenever I have to wash the handle portion itself (rarely; I hand wash and am careful to only wash the blades) I rub them down with fresh oil and at over 20 years old they look as good as new.

Great job on another unique antique item. I remember my grandmother had an old butter churning device. It was the traditional way of churning using a giant ceramic urn like pot and a wooden handled churner. I don't think I remember it ever being put to use when I was little. Enjoyed your video! But I'm afraid I would have sprung for some new wood, preferably something special or rare. Then imagine if you had used new copper for the sheet metal along with that copper elbow, and then polished and clear coated the copper. I would have used new screws, nuts and bolts as well. Lastly, I would have sent all of the remaining metal parts, gears etc to get nickel or chrome plated. But that's just me...
