A lamb pulao has a much more intense flavour than the chicken version. This flavour is perfect for winter when I think we naturally crave foods with deeper flavours. We will save the chicken version for spring and summer then.
Lamb is my hubby's favorite meat. He loves it more than chicken, so i tend to cook it often. Cooking lamb can be quite time consuming than chicken, because you need to cook lamb slowly so it gets tender and just melt in your mouth. The one thing you got to remember is try to get the best lamb you could find.

Ingredients
lamb meat 1kg
4 glass water
1 onion
2 tablespoon garlic salt
salt 1 teaspoon
mixed spices 1 teaspoon
for pulao
rice
1 cup oil
1 cup yogurt
4 tablespoon ginger garlic paste
salt to taste
1 bunch green corinder
1 large onion
1 tablespoon cumin seeds
green cardamom 5/6
cloves 10
3 black cardamom
1 tablespoon black pepper
1 star anise
nutmeg and mace 1 teaspoon
2 green chilli
