Richard, thank you so much! I have always been amazed at the artistry of the way Mexican tamales are folded and one day I would love to learn how to do it. But for everyday cooking, my great grandmother's recipe is perfect. I have made them with chicken before and they are delicious. I how you enjoy them.

Could you do tamales without using sugar? I'm diabetic, and I cannot add more sugar to masa.

Sure, you can omit the sugar and just let the sweetness come from the corn. You could also try using a sugar substitute that you can cook with. I haven't tried but I heard agave nectar and some others work well.

That's a great question. I'm not sure. Usually I make them all then freeze them. I think if you freeze the masa before cooking it might change the texture. I'll ask my dad.

Nice video, Lana. A couple suggestions, though. Wash meat before cooking to get the foul smell of the stationary blood. It, really, makes a difference. Secondly, don't recommend using aluminum foil for cooking anything. Those dark stains on aluminum foil that's been used for cooking are signs that Aluminum has escaped into the food. Research scientists have, recently, found that Aluminum has been found in the brains of Alzheimer's patients along with deficiencies in Vitamins D and B12. Short term memory goes first. Otherwise, great video!

Mi familia es de Santiago de Cuba. Esta es la receta de mi bisabuela. Puedes usar sofrito en el relleno, pero lo hice simple. Y mi bisabuela usaba Maseca porque el maíz en los Estados Unidos no es lo mismo que el maíz en Cuba. Así es como ella lo adaptó. Si sabes algo sobre los Cubanos, sabes que somos resistentes y podemos improvisar.

@@LanaUnderPressure yo tambien soy cubana... nunca habia visto usar Maseca para hacer tamales aqui... ahora harina de maiz como para tamal en cazuela... Si 😊 Lo comenté, porque yo se que la Maseca es super seca.. y yo por lo menos viviendo en Miami he tenido la suerte de conseguir maiz criollo que es lo que usamos en realidad 😊

Estoy celoso de que vivas en Miami. Crecí en Hialeah y toda mi familia es del South Florida. Ahora, nos hemos movido por todo el país y puede ser tan difícil encontrar ingredientes para hacer comida Cubana.
