I find cutting up vegetables relaxing. I don't know why I find it so soothing. It may have something to do with being on the spectrum and the repetitive nature of getting perfectly cut vegetables. I would love doing the mise en place for a restaurant with no pay.

I absolutely love watching you all cook. I'm on a restricted diet with no gluten, dairy, soy, limited corn and sugar. It's great to see you adapting recipes to accommodate Aaron's egg and gluten free diet and to hear him talk about how he feels better not eating those things. Most of all, I love watching Tristan's confidence in the kitchen. Has he considered offering cooking classes? I bet people would sign up. He not only has the ability, he shares such good information about why he's doing what he's doing. Lastly, props to Aaron for working the multiplication out for each recipe as he went. So many people haven't been exposed to that. I hope you keep these up!

Suggestions: For the ribs when you have no smoker, rub them with smoked salts. Make eggless mayo with aquafaba. Don't peel the redskin potatoes and rather bake than boil them. Try celery, celeriac, leek, scallion, sliced radish or chopped pickle to replace onion. I was so disappointed about the neglected jalapeño poppers. Especially because the meal looked good. Maybe wise to use an alarm/ timer.

Boil the potatoes whole and cut into pieces after. That way it stays way more solid and doesn’t absorb as much water. Same for mash where you don’t want it watered out.

He probably could’ve saved the money if you had just sent her for a couple large jars of mayonnaise instead of buying us a bunch of the small ones that made no sense to me. The smaller ones are more expensive. Mayonnaise in general is so dang expensive anymore. I hardly ever buy it for some reason they think they can charge seven dollars for a regular size jar of mayonnaise. A couple years ago it was four dollars at the most. I don’t think it’s worth that especially Helmans. Slaw looks awesome.
