In my opinion you’ve had a crazy harvest/preserving time, thanksgiving then Christmas followed by the pantry challenge so I think March should be the month where you can have a few treats of not having to cook from scratch every meal every day. Like a reward for all the hard work it’s nice to have cereal for a day and sandwiches you’ve not had to bake the bread for. Recharges the batteries ready to get back to the normal scratch baking xx

There was a short time that my kitchen was very short on supplies where if I wanted to eat I had to come up with something to make. I did not worry becuz those were the best meals to the point as I was sitting I thanked God for this great meal.

Date muffins are amazing! Finely chop a cup full of dates and soak in 2c boiling water, 1c sugar, 1t baking soda and let it soak and go cold. Then stir in an egg, then 1.5c flour and 1.5t baking powder then bake at 300 until even coloured across the top.

I know it's been 5 months since you put out this video but I wanted to thank you for the reminder to not let current events create anxiety in me but let God give me the wisdom to plan. I've been struggling with that very thing. My husband and I are currently saving up to buy a place so we can homestead. In the meantime where we are living we can't garden and am very limited on space for canning so I don't feel good about not having those things and then the anxiety hits. However your reminder and my husband encouraging me to do smaller batches of canning is God's way of providing wisdom and peace. Thank you and God Bless you and your family!

A great meal with cabbage is my favorite, German Skillet. In a skillet put chopped cabbage with chopped onions, sprinkle about 1/4 cup of rice around the cabbage, place ground beef ontop then a can of tomato sauce ontop of everything, salt pepper onion and garlic powder. I pour in about a cup of water. Put a lid on it. Cook on med low for an hour. Dont touch dont look just let cook. Then its done. Its delish!!

I love cabbage.. we also also fried cabbage so yummy with ham mostly sometimes with steak. I like plane in a blow . ♥️ cook it down as your ham if you choose also great without meat .. when fork tend and a little sugar turn up the heat a little to caramelize and enjoy 😊

Regarding spinach, I grow regular spinach during the spring. But when I plant my beans, I plant New Zealand Spinach. It grows great through the heat of summer and does not bolt. I am in the mountains of central Pennsylvania, so we have similar weather. I get my seeds from Botanical Interests and Baker Creek has the seeds as well.

I really how you are not afraid to purchase things for convenience, i.e. bread, ground flour, dry cereal, taco shells. So many homesteaders I watch are so rigid and strict w/their kids that it sometimes feels like a person might be a bad mom for doing these things. You are so loving and thoughtful to your whole family and it makes my heart happy! I really enjoyed the pantry challenge and how creative you are in meal planning/preparation. When my kids were home, I was very intentional to feed them organic. I was a stay at home mom and, and 42:21 we ate a lot of wild meat. I had a garden and bought fruit to can. I also bought raw milk when I could. Love your videos! I bought from Azure, too. Those were the days!

The Challenge was an excellent way to take notice of all my husband and I have on hand. We were extremely well stocked up prior to becoming aware of the Challenge. We are very blessed and don’t take that for granted. While we didn’t follow the challenge in a rigid way, I did make effort to use up / salvage pantry, freezer, refrigerated foods. This did cause me to get creative which is always a good thing. I appreciate your creativity in using up food your family had available to you. I put my spinach seeds in the ground in mid-September. It starts growing but not to full size, it stays small during winter and continues growing when weather allows it in spring. This way you have fresh green vegetables already in February or March and it does not start to build flowers as it is not warm enough. Thanks for your videos, I really love watching them. I am from Germany. There are no zones here. I have very good results with the variety VERDIL. There are special spinach seeds for overwintering outside. You can also do the same process with Lamb's lettuce. I started harvesting both two weeks ago and had absolutely no work with them over the winter.

We have all raised beds about 2 feet high and love them. I can set in a low chair and work. So much easier on the body, helps keep out some weeds, grasses, and moles. If you have older seeds, put them in a wet paper towel in a sealed baggie. Check and see if they have sprouted in a few days and then plant them if they have.

I haven’t necessarily done the challenge, but it definitely made me mindful of trying to use up things the I just want to overlook in my freezer and pantry. Maybe next year I’ll join you! Here's my mother's date bread recipe. It's really, really good! Date Bread (D’ Norton) Oven = 350o 1 c. dates, pitted and snipped 1 egg 1 tsp. baking soda 1 tsp. vanilla 1 c. boiling water 1-1/2 c. flour 1 tbsp. butter 1 c. chopped nuts 1 c. sugar Grease and flour loaf pan. Place dates in bowl and sprinkle with soda. Pour boiling water over dates and let stand. In mixing bowl, cream butter and sugar. Beat in egg and vanilla. Add flour and mix well. Add date mixture and nuts. Pour batter into loaf pan. Bake 45 minutes, or until knife inserted into center comes out clean.

I learned several years ago that by cooking my collard greens in the crockpot they don’t cook down as much, producing at least two cups more depending on the size of your crockpot. I froze mine in two cup servings anyway. I also realized that when I cut corn off the cob before canning or freezing it, I should have at least kept some of the cobs to add to broth for flavor in soup and other dishes. I can’t help but think of all the corn flavor I wasted years ago. When I was married the first time, we had a 50 acre farm and grew almost everything we ate. I love watching your videos and also how your children get involved in planting seeds and planning the gardening and meals. Great job! Blessings!

A great way yo use those dates: Remove the pit and put a dollop of sunbutter in it then top with a little sprinkle of sea salt. This is one of my favorite little treats/snacks. Delicious!

I just found your site a couple of days ago, and I just love it. I have been re-organizing my pantry and got a bushel of peaches this weekend. I have a peach blueberry cobbler in the oven I made peach sugar out of half of my peach peelings, and made peach vinegar out of the other half. I also canned 6 quarts of peaches. My first try at canning peaches. I have done jelly for a long time, so I am learning some new tricks. Love your challenge

This year I did better than last year. I did buy a few things like lettuce, oranges, bananas. Last year I spent about 15% of our grocery budget, this year less than 10%. I am going on through March but I will buy replenishing staple supplies if on a good sale. My biggest goal was to use up freezer items so I would not have them linger too long. This has really helped with my understanding of what we use in a month.

I didn't participate in the challenge, as this was my first year hearing about it, but I have followed a long and made an effort to go through my cupboards and try and use up those purchases that were maybe more impulse buys, or grand aspirational ideas or gifts from people. Your pantry challenge videos were not boring. They are thought provoking as I get tips and ideas for my meal preps. They are relaxing though at the end of a day, which is good during these crazy times. I agree about buying the snack foods for Hubble - people have to have their own conviction or it’s a fight.

We just moved into our new home. My intention is to have a garden and can as much stuff as I can possibly can! I’ve been canning store bought items as it demands. This weekend I managed 4 jars of blueberry/raspberry jam and 2 jars of applesauce. Was it a ton of stuff no! Was it worth my effort? YES! The jam is delicious and I’ve used the applesauce as a topper for overnight oats! I used 8 lemons that were soft. I zested them and dried the zest for my husband to use in his bar area. I squeezed them for their juices and I then placed the skins in my vinegar citrus cleanser jar. I will NOT have a huge garden in my house. Sadly I’m seriously lacking in room. However, to me ANYTHING coming from my hands and yard are a win! Thank you for continuing to inspire me to get going and “just do it”! God Bless you and your family!

Jessica, thank you so much for this video. I have enjoyed following your journey during this (and past) pantry challenge(s). Thanks so much for your little pep talk at the end of the video. As of late, I have been feeling extra anxious! I too headed to the stores this weekend and was shocked at the rising prices. I am thankful that I too have animals on our pastures and lots of land to expand garden spaces if needed. You have inspired me to reevaluate our garden plans for this year to find areas that we can provide our own food rather than relying on the grocery store…. I appreciate seeing all of your hard work in the kitchen and look forward to your next video! I would be interested in seeing the quantities of food your family rotated through during your challenge. We only have a family of 5, but I think that would be a really interesting video.

I am curious about something and hope you don’t mind a question. When I see folks buying from Azure Standard, it seems to be primarily bulk items. Now that your kids are grown, what kinds of things are you getting from Azure that will benefit you and your husband? Do you repackage and store items? I am just afraid I will end up losing some due to improper storage or something and absolutely negate the savings of buying in bulk.

@@1jmass Hi Jean. My order is fairly small compared to other people. I have purchased stuff like dried fruit, buttermilk powder, some flours, some fruits and vegetables, just a real variety of things. I really like azure because the majority of their products are either organic or non GMO. I love their variety and I like the quality. They pack the order really well too. I hope that answers your question.

I just saw a really interesting Facebook post from Homesteading Family. She freeze dried her fresh eggs and I thought you should take a look. You might like that better than water glassing your eggs. It showed how to reconstitute and cooking after freeze drying. This might be something you are interested in! Just had to share 😊

We live a Homesteading type way, not to the extent you and your family does, but I have most of the same knowledge that you have and I love how you present it in the videos. I didn't do both months, but I did do pretty good for January. As you said, you learn where the holes are in your pantry, and I did find some of those places as well. As I have told you before, ever since you did the other challenge where you preserved something every day, I really try to look at what I have and use it and make sure it doesn't go to waste. I feel so good about that. Like you, I can't wait until garden season as well. I also need to keep a better garden journal, which I plan to do this year.

You should think about canning your tallow in smaller jars. With the winter cold and the size of your family I bet you would go through smaller jars of tallow fast enough that it would be safe to keep a jar on the counter by the stove. I get wanting to refrigerate a bigger jar but maybe if the tallow is right by the stove it will be easy to just grab. If a thing is too inconvenient it just won't get used.

I have enjoyed and been encouraged by your videos. I don't have a homestead, but started adding extra canned goods etc just in case in 2020 and at the end of last year and this year we have been able to shop in my extras for my son and granddaughter when they really needed it and for us as well. Also started grinding my own grains for bread and baked goods. I have learned so much about the freshly ground grains and really relating that to Jesus as our daily bread. It has surely made a difference in our health.

Hi Jessica, I have been learning lots from your channel. The dates you can freeze if you want to make them last longer, they make a good cookies with walnut .
