I covered the outside of my barn board sheathing with 4 mil Black plastic then I used 2x4's nailed into the posts outside the sheathing with 8 inch ring shank hardened nails. Pre drill the 2x4's first and space them 4 feet apart to allow 4x8 sheets of polyiso insulation. Cover with house wrap and regular vertical barn tin.

Regardless of racking, will the areas without sheathing allow a crazed deer's antlers to penetrate drywall?

A Larsen truss is a lightweight wall extension that allows for thicker insulation in a building. Larsen trusses are used to increase wall size, reduce thermal bridging, and improve energy efficiency. They are ladder like trusses that are attached to the outside of a building's wall sheathing, then filled with insulation. The sheathing then acts as an air and vapor barrier. Larsen trusses can be used in new builds or retrofits, and they're a popular choice for Passive House Certification. Canadian builder John Larsen developed the Larsen truss in 1981 to improve insulation in existing homes. Larsen trusses typically include point-to-point gussets, which are small strips of plywood that connect the inside and outside chords of the truss
