Italian here - I don’t use any cheese sauce at all but ricotta seasoned with salt and pepper (and sometimes change it up with cottage cheese).

I’ve tried making it with ricotta. It’s probably healthier and quicker to make but I found it turns out too dry and nowhere near as tasty. I always make it the same way being shown here with the bechamel sauce except I don’t use zucchini or spinach. You really can’t beat a lasagne with the bechamel sauce. I’m Italian too.

I always add lots of vegie to stews or slow cooker meals and Bol and I always cooking them down !!!!!!!!!!!!!!!!!

I put bechamel sauce on the bottom with little bit on the top.
