Hi Latif, thank you so much for this recipe. I haven’t had a Dhansak, probably my favourite curry since I moved from England to Australia in 2004. When I moved here it was very difficult to get a BIR standard curry, so I started to make my own with varying degrees of success. That is until I discovered your channel. I have cooked a number of your recipes now and those that I share with are truly blown away with the taste and quality of the meal. The recipes, the explanations and the videos that show the very important techniques used are inspiring. When COVID is over and travel restrictions are lifted, on my next visit to the UK I will visit the restaurant to thank you personally, until then, thank you again. Kev.

This is not Dhansak from any side ! Dhansak is an ancient and quintessential Parsi recipe , steeped in tradition and culture ... Please don’t call this concoction Dhansak ! It’s cultural misappropriation! And nor is it a popular dish “ All over India” It is very popular in Bombay , where authentic Dhansak is served .. Please Google History of Dhansak and Parsis .. You will get your answer !

Latif, I have been enjoying your channel. I hope to make some. Question, tomato seems to be in most recipes, would green mango be an acceptable substitute for tomato? If not green mango, maybe green plums or tamarind? I am asking in order to avoid nightshade ingredients however tasty they do not impact my health very well.

This sooooooo not Dhansak. While the dish may taste good please don’t call it Dhansak! And since when did a Bangladeshi become an authority to claim that this dish (as shown) is made all across India? Also Dhansak is not an Indian dish. It is made by Parsis living in India who were originally Persians. It’s a sacrilege calling it Dhansak!

Way to con the internet. Chef, this is not dhansak, this is an abomination. I am sure it was very tasty, but it is not Dhansak. Dhansak is NOT North Indian, it is exclusively Parsi. Your lentils are wrong, the process is wrong, it isn’t a curry, you have the wrong spices, you’re missing vegetables, I don’t even know where to start. You cannot say this is traditional, it is categorically not.

Latif, I notice that in many recipes you use veg oil and then add ghee. What is the thinking behind using both? Is it just for flavour or is there more to it? Also, are you talking about butter-based ghee or the veg-based stuff? Thanks anyway for another great recipe.

Ghee can be overpowering so need something neutral to balance the flavour and aroma. Vegetable ghee is very strong.

Another great video. Just out of curiosity - do you tend to cook traditional or BIR at home? A freezer full of concentrated base gravy to be thinned out 1:1 with water is so handy and a great liquid to poach/pre-cook frozen chicken thighs in. Hopefully you guys can open up again asap - even if it means you'll be too busy to post videos at the rate you've been doing lately! Edit: one more question - would salting the onions in a bowl an hour or so before hand make life easier, or destroy the onions?

Can't wait to try this, dhansak is my fav and there is so many variations, I like a sweet/sour BIR style personally. Have you ever heard of a nepalese style dish called Kathmandu? I'm guessing it's a restaurant name, a spicy variation similar to yours with whole finger chillies and sliced of garlic.

You should research the word Dhansak!! It’s not a North Indian curry it can’t be chicken and it is not made of gram lentils it’s made from toor lentils... call you dish what ever but this is not Dhansak and if you promote this you are a fake !!

We had a poor upbringing - My old dad did the best he could for us, I mean we had never lived in a slum !! But as soon as we could afford it, we moved into one. I’m a fan of your recipes but this one you got it completely wrong. Dhansak is a traditional recipe which ideally should not be misrepresented. Dhansak is a combination of rice and daal. The rice is cooked brown in color thru A combination of caramelized sugar and onion. The daal used is Toor or masoor daal, never chana daal. Once cooked, the chicken / meat is separated, the daal is completely mashed up, then the baghaar is added and any chicken/meat is put in for a final simmer. What you have made is murkh-chana daal.
