Made this last night, with one change to your recipe... I fried the mushrooms right at the start, after the onions but before adding the spices, rather than 'boiling' them in the sauce. Delicious.

Snap. We tend to use large Field Mushrooms, so we always fry them first thing and make sure they're nice and dry so that the entire dish doesn't turn black! 😂

I love the stainless steel spoon. I've started using it, swirling the ingredients and banging it on the side like a proper chef!!!!!!! This bhajee seems fantastic, just how I like it, seems you've cooked this in a way that all the flavours intensify with that thick sauce

You may want to reduce the salt too as high sodium levels can contribute to high cholesterol levels. (Chronic Heart Failure sufferer here.)

Onion shortage can slam Bangladesh or any asian south country economy! What's how powerful it is. In Bangladesh if anything that can lockdown the country, it's onion. There's always onion crises and price goes up since the demand is so big and recently neighbouring country India suddenly stopped exporting of onions to BDESH a massive crisis came about and demand wasn't met, local price went up, people suffered then emergency imports had to been made from elsewhere which took time too. In Desi countries, Bangladesh.. without Onion.. Most people will not be able to eat. No food can satisfy most without onions.
