Ugh, I adore eggplant; it's been too long. 😖 I'm surprised you take the seeds out. I make the exact same recipe.. except I coat the pieces of eggplant with flour. Keeps them from absorbing too much oil and I always salt the eggplants abt 20 mins before cooking.. it draws out the water as well so they would hold their shape once fried. Delish dish!! My family loves it

I’ve been following Laura’s channel since that first no-bake key lime pie recipe, and let me tell you, I’ve never looked back! I grew up in a family where no one cooks so I’ve never learned... I couldn’t figure out how to cook chicken until I was 24! No word of a lie! So funny that earlier this week I was thinking of attempting to make pasta alla Norma and then this video went up! So helpful, I’ve never been able to cook eggplant very well! Thank you Laura!
