I only buy male eggplant... They have way less seeds than female. Look at the bottom of the eggplants... Males have a round belly button... Females gave a slit belly button 🙂

We usually have 24 or so people for Christmas dinner at my parents house and to say its chaotic would be an understatement, lol. Its a typical, loud, fun and full of laughter Irish Christmas and we love it. But then I'm the eldest of 5 siblings so our house was always pretty chaotic and that is just the way my parents like it. Every family event usually ends up at my parents house. Ohhhh and a big, massive YES for your Nona's eggplant preserve. Lee xx

I live in Toronto and last year we had snow in like October, but this year it literally feels like spring right now! It was like 12°C yesterday which is crazy for the middle of December! I WANT SNOW!!! ahaha

I swear someday I will go to New York at Christmas time. It looks absolutely gorgeous! And I totally know what you mean about the weather being so warm, Joe. I live in Nova Scotia and it was 12 degrees (Celsius) today. +StampingWithAmore ..So did my Dad make the eggplant marinaded in olive oil, with vinegar, garlic and other spices..I can't remember how he made it..But I remember he made big jars of this marinaded eggplant..Yes, Laura I also remember my Dad making this near the holidays as well...He loved it!...Laura, you just brought back good memories of my Dad at Christmastime..Miss you Dad xxoo

Laura, on the eggplants, if you look on the end where the bloom was, if it's a round mark its male and has leads seeds so it will be less bitter. The ones with a oval or slit mark is female and will have more seeds and be more bitter! Glad you are feeling better!

Laura, I cut the ginger fingers, wrap with saran and freeze them..when I have to use it in a recipe. I take a fine grater use what I need ..rewrap and freeze again..
