Correct me if I'm wrong but this recipe doesn't take all that much less time than making gumbo the traditional way with all natural homemade ingredients (instead of prefab seasonings etc..).
@Genesis2churchUs1199 жыл бұрын
Jack, let me add that you Should taste everything in the pot at the same time, a blend of flavor that makes your tastebuds JUMP for joy is what you should have. You should taste everything in that pot at one time. Cajun food is NOT about how hot from pepper a food is but rather that you experience all the flavors at once. Again, it is not about setting your mouth on fire and only tasting pepper, it is about a dance of all the ingredients in the pot.

I was born in La. and my mom cooked gumbo often. She made her own roux, never from a jar. Takes 25-30 min. to make proper roux. This is more like a stew than gumbo. The only veggies that belong in gumbo is onions and okra, not all those other veggies. To see the right way to make roux check Charlie Andrews video on how to make it.

Jarred Roux is fine. I have cooked gumbo with every roux making way possible...and you can not tell the difference.

Couple of things I do for my "lazy man's" gumbo - I use Tony Chachere's instant Roux, as well as the creole seasoning. Thomas Ragin’ Cajun Smoked Andouille Sausage is too hot for many - I use their medium - It's got the green label. Lastly, I add sliced okra for a thicker gumbo - after all, gumbo is the African word for okra. For me, I keep Frank's Red-Hot on the table for anyone who needs more spice. Try your recipe with some crawfish tails - you can find them in a pound pack in the seafood freezer of your local Kroger. Defrost them and toss them in during the last 10 mins of cooking. Use them instead of, or along with the chicken!

That is an interesting version. If you bake roux it is easy. You just stir 3 or 4 times and that is it. I've never had a powdered roux. lol Where is the Okra? lol If you get a chance, try an order of Beignets from Cafe Du Monde and a cafe au lait. Phenomenal!
@smoothieking1579 жыл бұрын
I live in New Orleans, Cafe Du Monde has the best beignets ever. you can actually buy Cafe Du Monde's beignet mix in a box along with their coffee to make at home. Thats the easiest way. Im not sure if its available online but down here you can buy the mix at walmart

I'm from Louisiana and Cajun cooking is my speciality. However, this looks like a very bland gumbo. I am known for my gumbo and there is a certain way to do it and way more seasoning then just a touch of Tony's which is mainly salt.
@IslenoGutierrez3 жыл бұрын
Cajuns are creoles, plus there are all kinds of folks that are not Cajun in Louisiana that contributed to south Louisiana cuisine so it’s all just creole cooking.

Hey just a lil story. I am from South Louisiana, I had a couple Food Businesses. One day 2 men walk in, one an elderly man. They kinda looking around and the younger says do you have some Tony Chachere's Seasoning. I was out at time. He then points to older gentleman and says let me introduce you to Mr. Tony Chachere himself. The truth of the matter, he kinda looks like that character on the container. That was over 25 years ago.

Love New Orleans. I'm originally from Nova Scotia and if you look at the history of New Orleans, a lot of the French Cajuns in Nola come from Nova Scotia. They were deported by the English in the 1700's. Ask them if they know how to make The Chargrilled Oysters from Acme in the French Quarter
@IslenoGutierrez3 жыл бұрын
Most of the Cajuns live west of New Orleans in an area called Acadiana, where it’s main city is Lafayette. In the New Orleans area there are French creoles (white people of Louisiana French descent, the French that were in Louisiana before the Acadians arrived). Cajuns used to be called Acadian creoles before Cajun. Creole in Louisiana means Louisiana colonial descent, meaning before Louisiana became a US state.

Wrong wrong and wrong. For one what is he sautéing the vegetables in. If you're gonna use a roux mix you don't really use butter there's no need to. And you don't use bouillon you use seafood chicken beef or turkey stock. The whole gumbo is the roux and that's what takes the time aside from making the stock. This is total crap and I was born, raised and lived in New orleans all 65yrs
