My mother is from Osaka; she would cook sukiyaki Kanto style while the rest of us ate, then she'd eat last. I learned by watching her and use the same ingredients now when I make it for my husband and three children. I cook it right at the table using an extra large electric skillet to keep up with their appetites. I serve it with fresh made Japanese rice. By the time they are done eating, the cooking sauce is so savory and tasty from the combined foods that I love being the last to eat! We use raw eggs to dip our food into before eating... delicious! I've been doing this my entire life and can't imagine eating sukiyaki without raw egg. Buy the eggs the day they'll be eaten and check that the expiration date is weeks away so you know they're fresh.

the only part that I did not like was the raw egg in the video. perhaps Japanese eggs are safe to eat raw. most won't try in Canada except a few.

Thank you for your lovely comment, it stimulates the appetite very much! Hesitation comes first at eating raw eggs and sweet meat together but the savory taste remaining on your mouth will last forever!

My family resisted raw eggs too when we went to Japan. It's not about fresh or not actually, they just don't think it's a good combination in their mouth or stomach. I ate just fine because I know it's not harming that way but my culture doesn't do things like that so my family are disgusted by the raw egg alone. So they... cracked the egg in the sauce. If any customer in your restaurant resist the raw egg, please serve only the york, or mix the egg before you bring it out.

Sometimes it happens that a different style of eating is unacceptable to others. Even if you request your preference to the restaurant, they'd like to serve as you wish. Hopefully, you can enjoy Sukiyaki all together next time!
