The majority o f men-at-arms remained squires their entire lives, you couldn't simply apprentice to be a knight. You had to be promoted by acts of valor on the battlefield. A squire might act as a servant to a knight, but he would also have his own page, sergeant, valet or routier serving him. The knight in turn, might be acting as a servant to a noble if he was ambitious. Assisting someone with personal tasks wasn't considered degrading in the Middle Ages, it was considered a sign of trust and the fasted path to promotion and rewards.

This may be an equivalent to ROTC nowadays if the person in training is to become a possible combatant on the battlefield. Of course, there is so much more involved with that than just chivalry not to mention other related responsibilities like diplomacy.
