Fantastic recipe. My only suggestion would be to make more caramelized onions than you will need for serving. First, it already takes so long to make them, so why not make a double or triple batch? Second, mujaddara is the kind of dish that tastes great cold the next day-and you want to have those caramelized onions on hand when you’re ready to eat!
