I grew up on this and other Lebanese dishes because my dad's family originally came to the U.S. from Lebanon and Sunday dinners at his aunt and uncle's home was always a Lebanese meal. Mom (English/Irish/French ancestry) learned how to fix the meals and then I learned. I still fix the meals for my brother and myself. Your video took me back in time and put a smile on my face! I made this recipe 👌I put the lentils in water overnight or add boiling water and let rest for 20 mins. Then I fry 1 cup of rice and wash 1 cup of lentils and add to the rice with 1 1/2 cup of boiling water and spices 20 minutes is done.

I've been making this ever since I saw this with the formula a couple years ago. But I use one pan only. I pour in just enough oil to cover the bottom of the pan, caramelise the onions and fish them out onto some kitchen paper with a slotted spoon. Then I ad my spices, the lentils and water to the remaining onion infused oil. Chef's have people picking up and cleaning after them. A normal person does not. Keep things easy.

Great video! I love Lebanese food. I came to Lebanon from Norway to study Arabic at the American University of Beirut eight years ago. I just loved every bit of my stay in this gorgeous and hospitable country that has taken more than two million refugees ( Armenians, Palestinians, Iraqis and Syrians who make the largest number). Lebanon is amazing with majestic nature, landscape and climate. What to say about its rich history and the Phoenician civilization who invented the Alphabet we use today and above all gave us the name of our continent Europe named after Princess Europe (ERP) born in the ancient city of Tyre. The history of Tyre is even more ancient than Rome . I learned in an Expo in Genova that Tyrenean sea ( il mare Tirreno ) between Italy and Greece is called after the Phoenicians of Tyre because they have founded many cities in the Western Mediterranean in Italy, Malta, Spain, Portugal and France as well as Greece …

Canaanites invented the alphabet not Phoenicnians. Did they teach that Phoenicians are the inventors of the alphabet in the AUB? Actually, Phoenician language is a Canaanite one. The Canaanite civilization in Palestine (Land of Canaan) is where the first comeplete alphabetical system originates and from which the Phoenician alphabet comes from. I think you have a Lebanese background.

Love the proportions, I never got them really right. One nitpick: the J in Mujaddara is not pronounced like the J in Spanish (Jose), it's ZH.

Your friend probably lost his home in that catastrophe a couple years back. My heart goes out to all the wonderful beleaguered people of that region. Almost 50 years ago I spent 6 months in Iraq, Syria, Jordan and Palestine. I. loved the food before and after.

I found that the original recipe was missing a little something. I ended up toasting the rice in some oil first and adding a little balsamic vinegar (lemon is more traditional but it's the only acidic thing I had on hand) really woke up the other flavors. It did feel a little salty though. I would probably do 3/4 of the salt.

Could you add BROWN rice at the same time and do the same thing?

You could even add the rice before the lentils if the rice cooking time is longer than the lentils. We have a wholegrain rice here that takes 45 minutes. That I would cook for 15 minutes before adding the lentils and cooking 30 minutes further. 👍🏻

I tell people all the time cooking methods and foundations translate through all types of ethnic cuisines.. Saute,fry,roasting,braising are all the same basic methods and a lot of bases like for soup start with some form of mirepoix/soffrito etc.
