Lebkuchen - Christmas Cakey Cookies! | Cupcake Jemma

What's Lebkuchen you ask? Lebkuchen are a honey sweetened German Cookie packed with Christmas Spices, Nuts and Citrus Zests. They are Cookies, BUT with a soft cakey centre that actually improves over time so best to bake a day ahead! Lebkuchen are really quick to make, and easy too, so a fab recipe to be baking before the big day arrives. If you don't have all the spices listed, don't worry! Just go with what you have.

180g Runny Honey
55g Soft Unsalted Butter
2 Eggs
300g Plain Flour
150g Ground Almonds
2 tbsp Cocoa Powder
2 tsp Ginger
1.5 tsp Cinnamon
1/2 tsp Mace
1/2 tsp Cloves
1/4 tsp Nutmeg

this is such a fond christmas treat for me - my oma used to feed us them on christmas eve, when she celebrates christmas, along with stollen and other christmas goodies. we always called them 'liebenkuchen' though, but i think that was her play on words because they were cakes, with love.

Just about to make my Lebkuchen! These look delicious, but I am definitely a purist lol it takes us 3 days to make them (absolutely rest the dough for at least 24 hrs!) Traditionally they are completely gluten-free, dairy free, have no cocoa powder, filled with walnuts, candied orange and lemon, cooked on Oblaten wafers and coated with chocolate or sugar glaze. If u want true Lebkuchen that's the way to go! 😊 Will still try this version sometime tho since it is much easier!

Your recipe sounds a lot like "Elisenlebkuchen". Which is a traditional german recipe as well. But different. 🙂

I wouldn't add the cocoa either as it overwhelms the spices' flavours (and also because my dog begs for lebkuchen and so I need to be able to let him have his secret treats without making him ill!).
