The device might be an original but I don’t believe that the method involved is all too mind blowing. White Castle punches holes in their patties for the same reason and the enclosure for keeping in the juices and even cooking is something that burger joints do with the half sphere lids, I think.

The masa restaurants all use the same chopsticks, which are made of untreated japanese cypress - they're special ordered from japan by the restaurants.

When he said no toppings, I finally felt like I was understood by someone. A burger with toppings can be great, don't get me wrong, but there's something amazing about a burger that's just about tasting the beef, with maybe a bit of cheese to add to it in such a specific way. Since they come from the same animal, the flavour profiles just compliment each other perfectly with taking anything away from either. He must truly make an amazing hamburger.

I like a little crunch, so I'll do just cheese with some fresh sliced jalapeno or even a little shredded cabbage. It's sweeter than lettuce and has a better crunch. And not on a bun, toasted bread. Like a nice rye, crusty peasant style, sourdough, or even pumpernickel. My grocery store bakes really good bread in house, I get that rather than the big name brands, way better.

Love Chef Masa so much. 👍 I have a set of square *_pie irons_* that are similar but without the internal spikes. Took them on a camping trip many years ago for toasted sandwiches but abandoned them because aluminum foil is easier, no clean up and less space. I may dig them out of storage and try making a burger. 😀

I’m definitely an enthusiast and not an expert, but in my head, I generally categorize hamburger patty cooking methods into “oily,” “wet,” and “dry,” with various styles, equipment, and techniques producing/providing different combinations of those effects. This device and procedure looks like a really fascinating hybrid between dry (peep those dark char marks) and wet (notably the way that Japanese-style Western cuisine likes to serve “hamburger steaks”). Depending on whether or not he’s oiling the inside of that press, or how much fat is rendering out of his ground beef, there may be oily elements going on in there too. Very curious. Never seen anything quite like it before. Looks delicious, and really makes me want to try!!

They can't reuse it. So they clean it and dry it. It's clever if you think about it. Japanese motto "mottainai", it's a waste not using them.

@@danortiz No you can re-use bamboo chopsticks. That's what asians do at home (although with more upscale versions than just disposables). It's out of place for an upscale restaurant to serve you food with disposable utensils; would you think it's out of place to eat a $40 meal with a plastic fork?

What I love about the old chefs, even those who became celebrity chefs, like Masa or Wolfgang Puck, is their work attitude. When they started there was no such thing as a celebrity chef, they were simply workers in the kitchen. I'm sure there were complicated egos even back in the days, but they were tradespeople working away in the background. I admire that.
