Perfect!!! I've been getting lemon/poppy seed muffins at the grocery store and now I'll make my own. They look delicious! The extra texture from the poppy seed and sugary topping is... * chef's kiss * delightful. And easy (even for me) to make. Thank you! (BTW, you look about 25 here with less facial hair!)

I know I'm not josh, but it kind of depends on which alternative flour you use. Almond flour should come out really similar, but do your research for others :)

Depends on the flour. My personal favorite GF flour is King Arthur measure for measure GF flour. No need to convert anything!

Your shortbread toffee butterscotch cookies were a total flop. Too much butter and i ended with a sticky dough that stuck on even parchment paper. Horrible. Even the temperature, which was 300F, was off.
