Step by step to make delicious lemon squares. This recipe is easily made gluten free.
Bottom layer
1/2 cup soft butter
1/4 cup icing sugar
1 cup flour
pinch of salt
mix together like pie dough, put into buttered 9x13 stove safe pan, press down well. Bake for 15 minutes at 350 deg F
Middle (we double the middle so I am giving you the ingredients for the double recipe if you want it thinner then just cut the ingredients in half.
2 cups sugar
4 Tablespoons flour
mix together
add in
4 eggs slightly beaten
8 Tablespoons of lemon juice
mix tougher and pour over the cooked bottom.
bake for 20 minutes at 350 deg F, check to see if its still wiggly in the middle add additional minutes as needed (go in 5 or 10 minute increments)
remove from oven once it is no longer wiggly in the middle and the outside edges are growing up.
top with a sprinkle of icing sugar.
Set aside to cool, then cut and place in the fridge.
