This looks wonderful. Lemon cake can brighten any day. I have a grating tip for you: If you leave the stem on the squash, you can use it as a guard while you grate, then discard it when finished. This has saved my knuckles numerous times.

Oh, that looks delicious! I love those pans too - we call it Splatterware - love my shallow small roaster pan that I use to make my cornbread in - bought it at War Eagle Mill near Eureka Springs, AR. I hear you Melissa about the KY weather in winter. We were transferred with Hubby's work and had to live in Georgetown (near Lexington) and of all the states we lived in that was the worse for grey days - couldn't wait to leave, retired in NC and the sun shines most of the time here even in winter.

I knew that was your new mixer just from hearing it--I have a large lift-style KA, too. It has a DC motor with a distinct whine. I bought mine back when they had the glass bowls--boy are they heavy! They released a replacement metal bowl that would fit the F style beaters, and I snapped that thing up quick! It was only available a very short time. Congratulations on your new toy--it's beautiful!

Yet another good recipe to make. Never would of thought to put lemon in there or buttermilk. You need to make again and add walnuts in there. Love me a good zucchini bread then right out of the oven add butter. So so good. ❤

Another great option for oil would be avocado oil. I use it for baking, but honestly, I'll use vegetable oil, too if it's a large amount!

I just saw my zucchini that I frozen this summer in the freezer and wondered what I can make to use that up. I know now. I am going to sub in Splenda for the sugar just cause I have to. Can't wait. Oh and my sister make about 20-30 different varieties of quick breads for Christmas. Her stepkids and grandkids like the breads better than cookies.

When I raised poultry I had to weigh my eggs to rate them as large, medium, etc. I raised little quail, pheasants, bantam chickens and standard chickens. So I spent a lot of time weighing and grading eggs. I agree that what I buy now is smaller and lighter than I was allowed to sell, but that was over 10 years ago. I bet this smelled heavenly while it baked❤

I love the color of your mixer. I had regular Kitchen Aide in white. Gave it to my daughter and bought a new one in blue. My son surprised me with new 600 professional in blue. I did have to buy the metal beaters like you have. The coating started coming off my beaters. My next purchase will be a glass batter bowl with lid. King Arthur has a bowl I would love. You need to do a video on the focaccia because I am afraid to start. I bought the kit so I have to get started😂❤

Tom I was listening to your wanting the flavor of the icing to soak down into the bread. I believe to achieve this perhaps poke top of bread with the tines of a fork! This looks so tasty! P.S.
